I need suggestions for one person meals...

With my husband in Australia to go to school, many nights I am making dinner for myself alone. I need some good ideas for healthy, tasty meals...preferably one that doesn't require messing up my entire kitchen.

I am sure you want something different the way it sounds. I am sure if you want a sandwhich you would go to wendy's. I hope this helps. Pick up some boneless Chicken Br**st. Hit it with enough Italian Salad Dressing to Marinated it for a few minutes. Place it in a pie pan and put it in your preheated oven for 15 minutes on 350*. Pull your pan out of the oven after 15 minutes and place some frozen green beans or corn in you pan and back in the oven for 15 to 20 minutes. While you are waiting place a Potato in the M.W. for 10 minutes. Once it is all done place your potato on your pie pan sit it on the table with a pot holder under it and enjoy. ORget out a samll pot and place a 16 oz can of diced tom. a chopped onion, celery, and a few peices of kabassi. Add a little rice let it simmer on low with a lid on it while you wind down for the evening and when you get ready you have a simple but filling jambalia.

Both of these ideas sound very yummy! And, yes, I don't want to resort to fast food, but I was sick of making plain baked chicken and sandwiches. Thanks for the great ideas.

When my stepdad is gone out of town my mom makes a huge salad in this giant bowl she has. Then nights she has Health Choice or Weight Watchers frozen meals and a salad. It's virtually no mess. I don't eat stuff like that - so I make salads that are meals - you know - nuts, dried fruit, cheese, etc on top. Or else I make healthy vegie sandwhiches. Sometimes I will make a big pot of homemade soup or a casserole and then I can eat it for several days.

You can try this beef stir fry Its really good. I hope you like it. 4 ounces beef top round steak 1 tablespoon soy sauce 1 tablespoon water 1 small clove garlic, minced Dash pepper 1 teaspoon cornstarch 1 tablespoon cooking oil 1/4 green sweet pepper, cut into 3/4-inch pieces 2 green onions, bias-sliced into 1-inch lengths (1/4 cup) 3 fresh tomatoes, halved Hot cooked noodles (optional) Directions 1. Partially freeze beef; cut on the bias into thin slices. For marinade, stir together soy sauce, water, garlic, and pepper. Add beef, stirring to coat well. Cover and marinated at room temperature for 30 minutes or in the refrigerator for 2 hours, stirring occasionally. Drain beef, reserving marinade. Add enough water to reserved marinade to make 1/3 cup. Stir in cornstarch. Set cornstarch mixture aside. 2. Preheat a medium skillet over high heat; add oil. Add pepper pieces, green onion, and mushrooms; stir-fry about 2 minutes or until vegetables are crisp-tender. Remove vegetables from skillet. (Add more oil as necessary during cooking.) 3. Add beef to the skillet. Stir-fry for 2 to 3 minutes or until done. Push mixture from center of the skillet. 4. Stir cornstarch mixture; add to center of the skillet. Cook and stir until thickened and bubbly. Cook and stir for 30 seconds more. Return vegetables; stir ingredients together. Stir in tomatoes. Cook and stir for 1 minute more. Serve over hot cooked noodles, if desired. Makes 1 serving.
