My grandma used to make this when she needed a pie in a hurry. I have one baking in the oven right now. Here is the recipe. 1 stick margarine 2 cups milk 2 teaspoon vanilla 1 cup sugar 4 eggs 1/2cup flour 1/4 teaspoon salt 1 cup shredded coconut Place all ingredients into your blender combine thouroughly. greae and flour a large pie pan. pour mixture into pie pan. Bake at 350 degrees for 30 to 40 minutes or until set. This pie will make its own crust filling and topping. My husband prefers to eat this pie cold with a drizzle of chocolate or caramel topping on it.

Nummy. I had this recipe years ago and lost it somewhere. I love coconut and love cooking with it. Thankfully we have a toaster oven so I can bake the pie without complaints about the house heating up from using the regular oven. Thanks for the recipe!
