I always use a mixture of onions carrot and celery as a base for almost any dish that I make that is considered a "stew" this includes thigs like bolognaise and cottage pie , any curry or stew. This mix is referred to in the catering trade as The Holy Trinity.Try it and you will be amazed at how well it works . Some chefs add a bit of chopped bacon to make the mix richer. What do you think!!!????

I always have these three items in my fridge and yes it add a sweet aroma and better taste to any food but I have not tried adding bacon. This is something I learnt today. Thanks Peter.
