They are easy to incorporate into your diet and they are extremely healthy....the common tomatoes! Tomatoes are loaded with lycopene, a chemical that gets into our body and absorbs free radicals! (nasty little cells in our body that contribute to cancer, Alzheimer's diabetes and more!) Eating tomatoes can lower one's risk for cancer and many other nasty disorders! What's more, cooking the tomatoes makes their lycopene even easier for our bodies to absorb! Tomatoes can be added very easily to our diet. Throw a few into your morning omlet. Add a slice to your sandwich at lunch and throw in a bowl of tomato soup! Eat foods such as spaghetti sauce and chili that have tomato sauce base. Here is a great article that summarizes the benefits of tomatos (as well as some of the other best health foods) Share with us some of the ways that you have found to add tomatos to your diet! http://www.whfoods.org/genpage.php?tname=foodspice&dbid=44

I started out trying to get a bit healthier and lose some weight in the process this week. My biggest problem is that I just don't like vegetables at all or tomatoes (i know they are a fruit before someone corrects me). All I can do is drink V8 Fusion...at least that way I'll get some veggies into my body and don't have to taste them as the juice also has fruit in it and thats pretty much all you can taste.

I eat tomatoes quite often, ecpecially when they are fresh. I live in NY...we dont quite often have fresh tomatoes in our supermarket. Usually they are bruised and old and gross tasting. ICK! But in the summer, when I grow my own or like to get them from the Farmers Market. YUMMY!!! I eat tomatoe sandwiches, like you said...add them to my omelets, put them in quesedillas, sandwiches, salads ect. Pretty much anything I can think of. I also like to eat a handful of cherry or grape tomatoes all by themselves. SO good! I love fresh tomatoes!

I do not enjoy the taste of raw tomatoes, but we do cook with tomatoes a good bit. My husband makes two different kinds of salsa that are both delicious, and we use tomatoes and tomato sauce in much of our cooking. Hopefully we are getting enough that way, because I just can't bring myself to eat a plain tomato! It must be a texture thing for me.

I'm another lover of fried green tomatoes. I like red ones too. Sometimes I make a sandwich out of just mayo and tomato. They are so much better when they are picked ripe right from the garden.

This is going to sound stupid. I've never seen the movie, either. LOL, but how exactly does one cook fried green tomatos accurately?

I love tomatoes, crazynurse, and try to eat them as often as I can. As a matter of fact I had fried green tomatoes yesterday. They were so good. My daughter has promised to bring me some more tomorrow. I also made a Caesar salad yesterday that contained tomatoes. I will eat them any way except in a tomato pie.

I eat a lot of tomatoes in these days. Now it is cheaper, because it is summer. Also, I would like to loose some weight, and the tomato is a very good fat burner, I read. Anyway in HUngarian the word Paradise and the word tomato are the same: Paradicsom

Just dredge them in cornmeal or flour and fry the slices. You can dip it in egg first. Some people do and some don't. It's delicious.

I love tomatos. And I have no trouble finding good cherry tomatos. But I don't have the best of luck getting regular tomatos in the best of shape when I try to buy them. Do you think a Farmer's Market would have a better selection of tomatos than a regular supermarket?

Thanks for the ideas, I can pass them on to my sister in law, she hates them. The kids and me on the other hand eat them right off the vine when we have them. Tomatoes are our favorite.

I was hospitalized one time ago. The doctors couldn't find out what ailment I was having, but my blood count was very low. The doctors started to worry. They told me if my blood count didn't increase, there is a possibility that my heart would stop beating without any prior warning. One of the doctors came to me at night and suggested slowly to me to eat a lot of tomatoes. He said other doctors didn't know he's telling me this, and he told me not to tell other doctors about it. He was only a practical doctor, and he was afraid his suggestion was not an acceptable one. I took his advice and started eating large, ripe tomatoes. The next day the doctors were surprised to see my blood counts were back to normal. I was relieved, and soon I was permitted to go home. Starting from that day, I consume tomatoes on a regular basis. I feel healthy now, and thanks to the doctor and the tomatoes.

Hi crazynurse! Tomatoes are the most wonderful food! Love them in omelets like you said, and really any way. I even pick them and eat them like apples. Great health benefits to boot!

I love tomatoes, especially fresh from the garden, but I enjoy them just about any way I can get them. They are one of my favorites when it comes to the fruit/vegetable category. I did not know that they would be better for you when they are cooked though. That thought never occurred to me. I would have thought that they would be healthier if they were eaten fresh. Last night I had goulash for supper, with lots of tomatoes. My kids do not like a lot of tomatoes in theirs but I do, so I get most of the big pieces. We also love spaghetti, lasagna, BLTs, salad, and tomato soup. Like I said, I love fresh tomatoes from the garden, and will sometimes pick them and eat them plain, or have a tomato sandwich. I also eat them on just about any kind of sandwich I make, and top my pizza with them. I'm sure there are lots of other ways that we eat them too that I'm not thinking about right now, but since this discussion just made me hungry, I'm on my way to the kitchen now.
