I want to make stuffed peppers this weekend....any good recipe suggestions?

I am looking to make something new for my family, and saw stuffed peppers on tv, thought they looked REALLY good and wanted to try and make them. Can anyone suggest a really good recipe?

Sorry, dear. I don't make them from scratch. I cheat. At the store (I get mine from Walmart) they sell boudain. It is a rice and seasoned meat sausage. I use these to stuff my peppers. Cut the tops off your peppers and clean the seeds out. Cook the boudain according to the package. Open the boudain and stuff the peppers with the mixture. Put them in a baking pan. Pour tomato sauce over the tops of them, cover with foil and bake at 350 'til the peppers are tender.

I don't use an actual "recipe" or even measure anything but here's how I make them: mix about 2 pounds total ground beef and sausage either in patties or removed from casing (if desired), about 1 cup cooked instant rice, onions and garlic to taste if desired, salt, pepper, a pinch of sugar, 1 egg and 1 small can tomato paste. Mix all together. Cut tops off peppers and clean seeds out. Shape the filling mixture into meatball size portions and place into peppers. Put in a baking dish or pan and pour tomato or spaghetti sauce over it and bake until meat mixture is done and peppers are tender. Basically, once the peppers are tender the meat will be done, I usually bake them about 1 1/2 to 2 hours. If you can't make out what I mean get back to me with any questions! These are delicious. That's almost exactly how I make them. I have frozen green peppers just for making stuffed peppers and they cook a lot faster, so I cook the meat mixture first and stuff the peppers, then bake until they're tender.

Stuffed Green Peppers 6 green bell peppers salt to taste 1 pound ground beef 1/3 cup chopped onion salt and pepper to taste 1 (14.5 ounce) can whole peeled tomatoes, chopped 1 teaspoon Worcestershire sauce 1/2 cup uncooked rice 1/2 cup water 1 cup shredded Cheddar cheese 2 (10.75 ounce) cans condensed tomato soup water as needed 1. Bring a large pot of salted water to a boil. Cut the tops off the peppers, and remove the seeds. Cook peppers in boiling water for 5 minutes; drain. Sprinkle salt inside each pepper, and set aside. 2. In a large skillet, saute beef and onions for 5 minutes, or until beef is browned. Drain off excess fat, and season with salt and pepper. Stir in the tomatoes, rice, 1/2 cup water and Worcestershire sauce. Cover, and simmer for 15 minutes, or until rice is tender. Remove from heat, and stir in the cheese. 3. Preheat the oven to 350 degrees F. (175 degrees C). Stuff each pepper with the beef and rice mixture, and place peppers open side up in a baking dish. In a medium bowl, combine tomato soup with just enough water to make the soup a gravy consistency. Pour over the peppers. 4. Bake covered for 25 to 35 minutes, until heated through and cheese is melted and bubbly.

Here is the recipe that I like to use when my vegtarian friend comes over for dinner. I like that it uses brown rice, which is a little more healthy. 2 large red bell peppers, halved and seeded 1 (8 ounce) can stewed tomatoes, with liquid 1/3 cup quick-cooking brown rice 2 tablespoons hot water 2 green onions, thinly sliced 1/2 cup frozen corn kernels, thawed and drained 1/2 (15 ounce) can kidney beans, drained and rinsed 1/4 teaspoon crushed red pepper flakes 1/2 cup shredded mozzarella cheese 1 tablespoon grated Parmesan cheese Arrange pepper halves in a 9 inch square glass baking dish. Cover dish with plastic wrap. Poke a few holes in the plastic wrap for vents, and heat 4 minutes in the microwave, or until tender. In a medium bowl, mix tomatoes and their liquid, rice, and water. Cover with plastic, and cook in the microwave for 4 minutes, or until rice is cooked. Stir green onions, corn, kidney beans, and red pepper flakes into the tomato mixture. Heat in the microwave for 3 minutes, or until heated through. Spoon hot tomato mixture evenly into pepper halves, and cover with plastic wrap. Poke a few holes in the plastic to vent steam, and heat in the microwave 4 minutes. Remove plastic, sprinkle with mozzarella cheese and Parmesan cheese, and allow to stand 1 to 2 minutes before serving.

We love stuffed peppers. I mix gr beef with chopped onions,cooked rice,a little garlic and salt and pepper. I place this mixture inside my topped and seeded peppers. I place them in a shallow baking pan. Pour a homemade sauce that I make from diced tomatoes, sauted onions.olive oil.basil.and oregano. i then bake at 350 degrees until meat is done and peppers are tender.
