I enjoy carrots, squash, collard greens, eggplant, and corn. I also like salad greens of most sorts. I never have had bitter gourd. I don't like most bitter things.

I eat all vegetables (except mushrooms, which technically are not even part of the plant kingdom anymore - I bet you didn't know that! They make me vomit anyway, so good luck to them in their new kingdom!). It's difficult to choose just one or two to be favourites - I love pumpkin/squash (especially as a curry), brussels sprouts (steamed/boiled), spinach (especially when cooked as a curry with paneer cubes in it - paneer is a kind of firm Indian cottage cheese. Spinach is also great when cooked with coconut milk), potatoes (they are just so versatile - you can do anything with them), karela/bitter gourd/bitter melon (fried, or in a curry), parsnips (especially strips fried or baked/roasted), sweet potato (boiled or baked/roasted), carrots (raw or cooked), swede/rutabaga (raw or cooked), and also various beans/legumes/pulses/grams (especially in a dhal, which is a thick, sometimes spicy soup). Mmmmm my mouth is watering just thinking about those!

Both my son and I like bitter gourd very much especially the dish which is prepared by my hubby. He cuts the gourd into slices and seasons with tamarind, salt and sugar for about half an hour. He then fries the seasoned slices (to have the bitter taste extracted first) with shrimps and onion slices.
