Homemade Mixes - Banana Bread

Winter time is the best time to bake. It is also the best time to take a day and make all your homemade mixes. We have used homemade mixes for years. I will be sharing a few of our favorite with you over the next few days. Everyone around here loves Banana Bread. Homemade has no preservatives or additives. That is a good thing.
Before you make this bread, you will need to make the mix for it. The mix recipe can be found here:

Banana Bread
3 cups All-Purpose Convenience Mix
3/4 cup sugar
3/4 cup water
1 egg
1 cup mashed bananas
1/4 cup wheat germ ( this is optional- but I use it)
1/2 cup nuts (optional)
Beat egg and water together. Add sugar
and bananas and mix. Stir in Convenience
mix and beat until blended. Add nuts.
Pour into a greased 9 x 5 x 3-inch pan.
Bake for 45 to 50 minutes at 350
degrees. Let cool before slicing.

I would be willing to bet that I could put flax seed meal in instead of wheat germ if that is what I have on hand.

I have never use wheat germ in my banana bread before. It sounds like a great addition to a simple recipe. Thanks for yet another great mix.
