I had the most delicious jello salad for dinner

I visit my dad and stepmom every other Sunday and they always cook dinner for me--they're great cooks! And it's so cute, the way they brush against each other or touch. Dad's 85, "mom" is 79. Anyway, mom made a jello salad and knows I'm on a diet so here's what she put in it: Crush pretzels, the skinny stick kind is easier. Spread on bottom of a 1 qt casserole. Then mix up equal parts of no-fat cream cheese and no-fat whipped topping like cool whip. Spread atop crust of pretzels. Cook some sugar-free strawberry jello but leave out 1/4 cup of the cold water. Add a can of frozen or canned strawberries, the juice will make up for the missing water. Measure it just to be sure. Refrigerate till firm and serve. Yummy!! She sent some home with me!

I've had chocolate covered pretzels, but never pretzels in jello. I bet it was a great taste - and it sounds all creamy and rich, even if it wasn't. You have a very considerate Stepmom cooking and taking into consideration your diet. I have some frozen strawberries I need to use up and if I can remember to get the jello at the store, I already have pretzels and cream cheese. I bet the guys here will like this.

Thank you for BR. I made this a while ago - regular jello not the diet kind, and it turned out well.
