What vegetables are the easiest to grow?

I have had good luck in the past with tomatoes and leaf lettuce in fall. Anything else I try to grow seems to wither away.It is hot and sunny where I live and we have a soil that has some clay content. I will try peppers again because I moved the garden to a sunnier location. What do you think would grow well for me?

Tomatoes and peppers will do really well with enough sunlight and heat. Leafy greens like lettuce and spinach can have a batch in early spring and another in fall, sounds like they won't survive well in the midsummer. Beans can do well in the heat as long as they get enough water, and you can get a lot of pretty heat resistant herbs. I'd be tempted to try a squash or melon too, but make sure you hill them, and they do like a lot of organics and compost added to the soil periodically. You can also try adding peat moss and compost to help with soil that is too clayish.

I'm a little more north than you are but I have had good luck with mint. It grows like a weed in fact! It's very hearty and comes back year after year. Peppers seem to also work for me. I htink having things i nthe sun more will help you. Also I end to water in the evenings since i hear that helps them retain the water longer. Good luck!

The watering depends on where you are- in most climates watering in the evening promotes mold and disease growth because the plants are left damp all night. Most gardening books recommend watering in the early morning, and if it's really hot and they get dried out then water a bit more in the afternoon to perk them back up.

ah yes clay, are we talking georgia clay ? anyway when i lived in georgia which is 90 % clay i took all the leaves laying around and turned them into the clay which worked well on zuccini,eggplant,red cabbage,peppers all colors,pine straw works well when turned into the soil.try to plant the leafy veggies in a spot that only gets the morning sun and they won't burn up

Squash, zucchini, eggplant, watermelon, and peppers are all easy. Beans, peas, and okra are also pretty easy, but you do have to worry about giving something for the beans and peas to run on. I've successfully grown all of those in an area that was hard clay (slowly has been amended over the past few years) in an area that gets direct sun all day. This year, I'm taking it easy and just doing tomatoes, tomatillos, peppers, and okra. :)

Thanks. easier the better for me. My gspace isn't too big so I think I'll stick with tomatoes and peppers and herbs in the back.
