With the price of food and gas on the rise, I frequently throw a few very cheap meals into my weekly menu. Spaghetti tossed with olive oil, garlic and red pepper flakes, Sloppy Joes made with homemade sauce (hate that Manwich stuff, YUCK), Ground Beef Stroganoff served over Mashed Potatoes, Chicken Quesadillas, Chicken Salad Sandwiches. What are some of your favorite cheap meals?

Hmmm my cheap meals are pasta dishes. There is so much you can do with pasta also I go to the local butcher to get better deals on the meat than the market because the butcher charges you a fraction of the price I have 10lb of ground burger for about $15 dollars. LOL!!! I get steaks Delmonicos at 2.99lb I get stew meat for 2.00lb. I really try and shop cheaply and in bulk it saves money but I make lots of stews and pasta and crock pot meals that I can freeze the left overs if there are any LOL!!! Most of the time there are not. I spend a lot of time cooking. I took 2 yrs of culinary arts and I love it and I look for the best deals on the best quality of meat, poultry, and fish. I find it and grab the stuff up. Sometimes buying in bulk is better. LOL!! take care.

For a cheap meal you can't beat beans and corn bread. Some time I make them with out any meat and add seasonings such as sage thyme and oregano and always garlic and onions. sometime I will add a smoked turkey wing or leg. I make the corn bread with self raising corn meal and add some cheddar cheese because that makes it a real hit. Chicken and dumplings is another one. I take some leg quarters and simmer with poultry seasoning and some garlic until the meat falls off the bone then I make the dumpling from a biscuit mix and serve over mashed potatoes and a side of green beans. I can get 6 leg quarters at Aldies for about $3.00 and can get 2 meals out of them 3 for the chicken and dumpling and 3 for chicken salad sandwiches. i cook them all at once starting with them frozen to get a lot of broth. This make 2 or more meals for 3 people
