Squash How-to's

Does anyone have any good squash recipes? I have squash coming out of my ears....from my garden. It isn't Zucchini squash but yellow squash. I need some ideas on how to fix it. No one seems to know. I have cooked a lot of things but not squash!

I like to cut them up with zucchini, carrots, and onions and saute them in butter. They would be good without the zucchini too if you don't have any. I have also had them without the carrots, and with the onions only. This last couple of weeks I put the sauted mixture into the oven and baked it for an hour too. It got a really good roasted flavor.

We just had yellow squash out of our garden tonight for dinner. I stewed mine. I cut the squash up in small pieces (across the squash), cut up about 1/4 of a big vadalia onion, and put them in a pan with water. I added a little salt, butter, and pepper, and let them cook slowly until they were very soft. We had them with blackeyed peas and steamed broccoli and cornbread. And, I ate too much! But they are delicious! We also love them friend. I use Canola oil in a skillet. Cut up the squash just like you did for the stewed squash. Salt and pepper and roll in meal. Have the oil hot in the skillet and place the squash in the hot grease and fry until they are brown on each side. They are delicious this way, too. You should be able to find some squash casserole dishes on the Internet.
