Do you Love Chocolate & Mint?

Well I found a great recipe, and I baked it for my residents and they loved it. It's called "Irish Chocolate cake", and it is to die for. Here is the recipe. It is really easy to make! 2 sticks of butter ( for cake) 1 stick of butter ( for mint) 6 tablespoons of butter ( for the glaze ) 2 cups granulated sugar 2 teaspoons vanilla extract 4 eggs 3/4 cup baking cocoa 1 cup flour 1/2 teaspoon baking powder 2 2/3 cups powdered sugar 1 tablespoon + 1 teaspoon water 1 teaspoon mint extract 4 drops food coloring 1 cup chocolate chips Heat oven to 350, grease 13 x 9 inch baking pan. In a bowl place 2 sticks of butter , cover microwave until melted. Stir in sugar and vanilla. Add eggs, beat well. Add cocoa, flour, and baking powder, beat until well blended , pour batter into prepared pan. Bake 30 to 35 minutes. When done cool completely. For Mint cream, combine powedered sugar, 1 stick of butter, water, mint extract, and food coloring, beat until smooth. Spread evenly on cake, cover the entire cake. Refridgerate until chilled. Chocolate glaze: Place chocloate chips and 6 tablesppons of butter in a bowl. Microwave until smooth when stirred. Cool slightly, pour over chilled dessert. Cover and refrigerate. This is a wonderful dessert for any occasion!

And it sounds so good Irish. I LOVE chocolate and mint but... Mint is one of my triggers for asthma. As soon as I eat it I go into a full blown attack. I found this out after eating a peppermint patty :( wahhhh.....lol I love peppermint patties and mint ice cream and chocolate and mint cookies..... It's just not fair, I tell ya! LOL Have a good day :)

Well no wonder is tastes good. It has almost a whole POUND of butter in it. I feel myself gaining weight just reading the recipe. I love chocolate and mint, but I am not too big on cake. My son likes it when I make him cookies with crushed up Andes Candies in them. Nice mint flavor really comes through.

See that's the thing, the cake is between a cake and a brownie, it seems to be somewhere in the middle.

I've always liked the combination of chocolate and mint. That sounds like a very rich cake.

Trust me tis cake is very rich, I also have another cake I make that is really rich as well, but it takes much longer to make.

wow that sounds really, really good. I love like chocolate chip mint ice cream and this sounds just as good. I think that I might have to for sure try this one out.

That sounds like such a awesome dish. I will have to try that out. However I do have a question. The food coloring that you use I would assume that you are using green. As well I see alot of ingredients here and just wondering how big of a cake this makes?

Yes it calls for green food coloring, but I only had blue, so I used that and it was pretty. The cake itself makes a 9 x 13.

hi irishmist. i like your name. and chocolate mint i used to be crazy about. i still like it of course, but i used to be wild over it and couldn't believe the great combination. i would like the girl scout cookies and then the ice cream that was mint with chocolate chips. Mmm. i used to request that for my birthday. yum. your cake sounds good, i can almost smell it.

Oh I hear ya I'm a mint lover as well! I like the combination of mint ice cream and black raspberry ice cream on a cone!
