Vegan Meal Planning

Does anyone have any good ideas for how to plan my vegan diet better. I'm super busy, and I want to be able to do a good bit of cooking on the weekend to get me through the week. So far I've taken to cutting up a bunch of salad greens for the whole week and putting them in the fridge, but that's about it. I also need some good ideas for what to take to lunch with me. I'm a college student and the vegan food on campus is hard to come by and even harder to actually eat.

okay ive been a vegan for bout more than half a year and here are sum things i find that work: peanut butter sandwiches (u could add jelly but i personally dont like it:) amys bean/breakfest/non-dairy burritos amys canned soups thai foods (most wont say vegan so u have to chek pakages :( cucumber sandwhiches tofurky wraps/sandwhiches chik'n nuggets (not morning star those are pretty much all dairy and eggs) boca burgers!!! specially the chik'n ones those are a few i can think of hope it helps!

Unlike the misconception there is a lot you can do other than salads if you are a vegan.There are a whole lot of healthy and interesting recipes you can try. You can make preparations in advance so that you are not actually left with a whole lot of work in the kitchen when you do get back. you can make some bean sandwich spread, stuffed green peppers -- leftover brown rice mixed with spaghetti sauce with soy cheese on top, brown rice with some chopped veggies as green onions and carrots with tofu, Red Lentil-Cauliflower Soup with Pita. Use Avocados and tomatoes as a sandwich spread on a good whole wheat bread
