What are dandelions good for?

To most dandelions are just a nuisance, a weed, and an eyesore. Modern scientific analysis reveals that dandelions are a good source of calcium, potassium, vitamin A, and vitamin C. The calcium content alone is impressive. A serving of dandelion greens has as much calcium as half a cup of milk. It is suggested that the rich mineral and vitamin content of dandelions is because their long taproot reaches down to the rich subsoil, which other plants cannot reach. So next spring instead of killing the dandelions eat them:-)

I love dandelions, I mean, I like to pick them. I think they're pretty and underappreciated. Though it's really hard to play "He loves me, He loves me not" with them! I was thinking of doing that in front of the guy I like, just to see what happens.

Dandelion Salad"This is a very good use of all those annoying dandelions growing in your yard. INGREDIENTS: 1/2 pound torn dandelion greens 1/2 red onion, chopped 2 tomatoes, chopped 1/2 teaspoon dried basil salt and pepper to taste DIRECTIONS: In a medium bowl, toss together dandelion greens, red onion, and tomatoes. Season with basil, salt, and pepper. Use dressing of your choice

Sometimes I think it behoove us all to know a few wild edible foods in case we get lost in the woods for an extended time, or for when the biggy collapse occurs which sooner or later it will.. Milkweed pods when they are little are edible, as are the bottom centers of cattails.. plantain spikes if you know what they are, are edible.. let's see.. red clover blossoms make a very good tea.. I used to know more.. That's interesting about the dandelion's deep tap root.. makes perfect sense.. now I'll remember that everytime I dig up one of those long rooted plants from my flowers.. I let them grow in the lawn.. at least they're greeen.. My mother used to gather them every spring and cook some up and they were yummy, if you changed the water a couple of times.. and got the young ones, buds, roots, and all..

Oh, I know you can eat them, lol. I have heard from a lot of people that dandelions are great in salad. I still can't bring myself to eat them. Maybe if I would be totally starved and nothing else would be available...
