We do a pork roasts every few weeks, and what I do with the leftover is dice up bits of it to go into risotto (instead of chicken), omelettes, salads, toasted sandwiches, and so on. We basically get one full meal and ingredients for thre other meals, and if I know that I have cold roast pork left, I won't bother buying chicken or ham for those other dishes. Grandpa

my wife is good on recreating another meal from left overs. maybe on left over pork she will saute it with garlic and onions and then tomato sauce. she will bring it to a boil and put pre fried tomatoes and carrots. a little water, salt, pepper and sugar to taste. then bell pepper on the top before turning the heat off. i love this recipe so much. hope it helps.

I have tried some of the leftover chicken recipes, although not yet tried my hand on pork leftovers! And believe me, if made well, these leftover recipes can even beat the original dish you prepared the previous day, coz' the seasoning must have blended well and along with the new ingredients you add, it gives the curry a heavenly touch! Also, I get help for my leftover chicken recipes from here http://www.ifood.tv/network/leftover_chicken/recipes Some of them are truly awesome!

That is a good idea. We have taken our left over roast and cut it up into small thin pieces and made a sandwich with it. We do that with meatloaf and with left over turkey we will cut it up into really small pieces mix some mayo with it and again make a delicious turkey sandwich.
