Why does Olive oil figure in most salads?

Olive oil, one of the most sought after oil by health freaks, if one is permitted to use the word -freak-, is also one of the most expensive of edible oils. Why do people use Olive oil in most salads? What makes it so special?

My family is Italian so a day without olive oil is like a day without sunshine. LOL. Personally, I think that olive oil has a distinctive taste that I enjoy particulary in salads. Olive oil and a little balsamic vinegar. We even use it on bread instead of butter. Delicious. Can't imagine using anything else.

There are several brands of Olive oils available? Can you recommend a few good ones?

My favorite brands are Colavita, DeLuca and Bari but in a pinch, I'll use any olive oil that's extra virgin olive oil. There's a shop that I like at the beach that makes a garlic infused olive oil that I love.

Olive oil makes salad dressing taste better in my opinion. Olive oil also contains good cholesterol. I don't know the exact name for it but I know my mother and brother both have high cholesterol and the doctor told them to use olive oil.
