What can we make with strawberries that are starting to get mushy?

They are not moldy, they are just starting to go soft. My dad bought 2 pounds of them for some reason and we can't eat them fast enough, so I'd like to make something out of them before they go bad. Anyone have any ideas? Thanks!!

I love strawberries mashed up and mixed in with pancake batter. The pancakes are so good with maple syrup. You can even throw some extras on top of the heap with some whipped cream. This is a favorite summer drink. I like to throw about a cup of apple juice, handful of strawberries, and a banana into a blender and blend away. The strawberries are high in natural sodium (not salt sodium but the mineral sodium) and it helps keep me cool in the summer. How about strawberry shortcake with whipped cream. Yum! I like to just snack on strawberries for a snack in the mid morning or in the middle of the afternoon. Oh, and how about strawberries dipped in melted chocolate. I better go, I'm getting hungry :)

I have stopped looking outside to see of it's snowing. I think that is a given here. I made strawberry pancakes for dinner a couple of weeks ago. It was perfect for the end of the day. I didn't have to have desert or is that dessert!

To avoid having strawberries go bad I just clean them right away and put them in ziploc bags adn stick them in the freezer. They last a while and frozen fruit is a good substitute for ice cubes when you are making a smoothie. If you want to cook with them using frozen would be ok as well.

That's a good idea, too. For some reason I never think of freezing anything but meat...

Hi cortypants...I usually have too many strawberries every year when they are in season here..I eat my fill of fresh ones..the ones left over that we cant possibly eat or are going a little soft, I mash and add a little sugar to form a syrup and freeze it in containers..That way I have saved the berries for strawberry shortcake at a later date or as a topping on icecream or a milkshake..So many uses and at least they wont go bad.
