I used to have a small crock of sour dough starter, it's easy to make and easy to maintain, and it's very versatile to use! Most people would associate it with bread, however I never used mine for bread! I use to make sour dough pancakes and add fresh apple and Cinnamon to the batter they were awesome, when I lived in Salem OR we had a raspberry vine near by and on Sunday mornings I'd go out and pick a bunch of raspberries and make sourdough raspberry waffles! Great with apple smoked bacon. My specialty was sourdough pizza crust with our favorite toppings! My question is would you like to try some sourdough starter or have you ever had a good starter going? Yes going as you use it you replenish it and it keeps going on forever, mine lasted almost 2 years, I kept it in a crock on the kitchen counter! Let me know your thoughts on this! tdemex

I know this lady from the Ukraine and she made wonderful pirogies. she lived in Canada and visited the Island yearly. She has passed now but I wish that had asked her how ot make them. I love the idea of a sour dough starter and will be making it. Thanks for this excellent topic

Pirogies are great I used fry them up in butter and onions and top them off with sour cream, that's the way our polish family ate them along with polish sausage and horse radish! I haven;t that in a long time. Last time i was in Detroit I had some in a polish restaurant there, they were good but not like homemade! They are not hard to make just time consuming and ya gotta be in the mood. What Island in Canada are we talking about? I spent a lot of time on Vancouver Is. and another one near by, but forgot the name of it! Long story, but did some Salmon fishing and crabbing there! The sour dough is easy and so good! you are very clever to use the sour dough starter so much ways to add favour bread,how do you think out this way? so many substances that you had written, and i did not heard it,even if i had not eaten.you are expert in eating,i had not try it,could you explain more detail of the favour or taste to this sour dough starter.what different favour if you have not it? interestingly,i have not thought of this substance having such function to food.

I never made bread with it, the pizza dough was as close as I got! The ideas I got for the pan cakes and waffles came to me from the International House of pancakes which is a chain of breakfast restaurants here in the USA, but they never used sour dough as far as I know! The sour dough gives the slight flavor of what I would say is a vinegar taste that's about as close as I could think it would be it's different but makes your mouth water! Thanks tdemex

My sourdough starter is already over 2 years old. I keep it in the frig and it will last forever as long as I freshen it up at least once every 2 weeks. I use mine to make bread in a bread machine. The problem is unless you let it work before you bake the sour taste is muted. When I let it set it rises too high in the machine. However I do love the taste and its well worth the trouble. Your recipes sound wonderful.

I only kept mine on the counter when I was using it a lot. If I kept it there to long with out using it, it would get a yellow water on the top, which wasn't bad I would just stir it and add a little flour to it, in order to increase the flavor you'd have to leave it out longer so the yeast can do it's thing in the dough as I pointed out above. in my case just for pancakes and waffles the flavor would be strong enough as it was, some times I left the pizza dough out over night and it was soooo good! The main thing is it's so easy to do and most people aren't even aware of it! t----
