There was a time I simply used to hate brinjal.Of all the vegetables, I preferred eating brinjal the least.Yet I have observed that sometimes it does taste delicous.I guess it is because of the way brinjal is cooked that makes all the difference.Tell me your opinions about this vegetable.Do you guys like or dislike it?And your reasons for it.

Yes, I love brinjal. There are many who are allergic to it and even some brinjals are not of good quality so your mouth may itch…I’ve experience this quite a few times but I simply love brinjals. It might be as a curry or fried or in fish gravies…it’s a very handy vegetable.

Brinjal in this country is known as eggplant. It is definitely one of those vegetables that is good (or not) depending on how it's cooked. It doesn't really have a lot of flavor on it's own, so it needs a flavorful cooking method. A lot of people here dip slices into flour, egg and seasoned bread crumbs and then fry it. I've never been a big fan of it done this way, although with a spicy dipping sauce it can be good, or served in a tomato sauce with cheese melted on top. When you have it and you do like it, how is it cooked? I'm always interested in new ways of preparing it.

I am not sure but isn't Brinjal what in the US is known as eggplant? If it is the same thing than yes, I love it. I think the eggplant is under rated because of its "bland" flavor but if cooked properly, can be quite delicious. Eggplant is a great meat substitution too so its great for the vegetarian. Most people think of it cooked in an italian method usually involving tomato sauce and mozarela cheese but there are lots more interesting ways to prepare it like stuffed with pilaf and raisins or couscous with tomato eggplant sauce, or stuffed with garlic sauce, and loads others. Eggplant soaks up flavors very well much like tofu does. Althogh most people think of it as a vegetable, it is actualy a fruit. Way back when, eggplant were small and white and looked like eggs, hence the name. How do you cook it? I'd be interested in some Asian recipes. J
