what's the best shortening to use when baking moist muffins--oil or butter?

i'm really not good at baking but when i read recipe books about how to make the perfect moist muffins, i get confused. most prefer oil but some, even TV personalities prefer butter. even Bobby flay from the food network uses butter. he once had a muffin throw down with a pastry chef who used oil and got a tie. i've made 4 attempts to bake muffins and all of them turned out dry. :( i really just want to make good moist muffins, any ideas? thanks

I use real butter in my muffins. I think they end up with a better flavor with butter than with oil or shortening. Make sure you melt the butter first though.

ok. but the instructions usually tell me to use softened butter, not melted. have you tried using softened butter? how did the muffins turn out? please reply, thanks much! (--,)

I make pumpkin muffins and banana muffins and they always come out really moist. Part of the moistness is the moisture from the banana and the pumpkin though.

I like to use oil my muffins always turn out moist and another secret for moist muffins,cakes is not cook them as long as it says take out a little bit before time is up.

I always use oil , and about five minutes before time ,everybody has me do all the baking for every thing because everybody likes my cakes, cookies, muffins

thanks meemaw! but less time? how many minutes do i subtract from the instructed time? i tried oil but they didn't turn out moist. did your recipe say to use oil? or did you just prefer to use oil over butter?

cool! from an expert! thank you sooo much for giving me advice, meemaw. i have another request though... i also tried making carrot cake, but the taste was a bit off... it had a bitter after taste... i didnt burn it, but it tasted odd.. what did i do wrong?

Probably oil is better. It should help them be moist. Olive oil is better for you but not necessarily better to use! I gues you need to try a batch and divide it up and use the different items to see which turns out better.

thanks macdingolinger.. i'll do that.. do you have any other recipe you could advise a beginner, like me, to bake? i've tried baking cookies that aren't crispy.. i love to bake but i guess baking doesnt like me.. :(

Butter are good for muffins for it gives creaminess in texture. But, it can affect the consistency of the muffin when mixed with other wet ingredients. It can be too soft or to dry when cooked. To make your muffin moist, you must check again your measurements used. Then, when beating time for mixture it must be only done in a time said not excess for it will also dry your muffins when cooked. The butter had been absorbed too much by the ingredients before baking time. Time preparations are important for this kind of products.It must be at fast and will not stay uncooked for a long time.
