Interesting vegetarian lunches

I am looking for ny suggestions for lunches that contain no meat or fish. I was stuck in a rut of pasta and now I mainly eat toast or lentils. I prefer it to be healthy and I also love cooking. Looking forward to your responses!

Why not try salads. There are many different types of lettuce, loads of various vegies, and you can make your own dressings. You can also add different kinds of beans, pinto, black eyed peas, kidney, black beans and so on. If your packing a salad to take for lunch put your vegies, beans, in the bowl first, then top with the lettuce, and put dressing in a seperate container. This will prevent everthing from getting soggy. You could also make soups. If you like cream soups but don't want the fat or additional calories try this: say cream of mushroom (could also be broccoli, califlower, split pea) put the mushrooms (use different kinds for best flavor) in the stock and add onion, garlic, carrot and what ever else you want. Let it simmer until everthing is tender. Then after it has cooled jput the soup in a blender and blend until creamy. If you prefer to have bite size pieces in your soup instead of all creamy just blend a portion of the soup. Have fun and enjoy.
