Why duck meat is not mainstream in the Phillippines

It makes me wonder, we Filipinos eats duck eggs and Balut which is duck egg with fetus inside but for some unknown reason duck meat is not widely accepted nationwide. We have 4 mainstream meats only, Beef,pork,Chicken and seafood.I think Turkey meat is also not widely accepted here but I think its more because of the price. How come we eat duck eggs and duck fetuses but not the actual duck? Why its not a normal meat in the Phillipine Market?

hi! maybe for the very reason that we can do a lot of dishes with beef, pork, chicken and seafoods... these 4 tend to be more widely used than duck meat. the texture of duck meat can be a bit tricky to cook, therefore it's kinda limiting. often the meat has an exotic tanginess to it or sometimes the meat is just too hard to cook perfectly. so far, i've only eaten 2 almost similar dishes using duck meat. one is a simple adobo and the other one is the adobo with a twist using coconut milk.

hmmmn goat meat cooked caldereta-style is a great dish. have a try. my father used to cook it often. spicy caldereta tastes really good especially when the meat is very tender. so soft that it almost falls off the bones. hehe again, goat meat can also leave an aftertaste if not properly cooked. as for the goose, they just say the meat is darker than most birds and richer in taste. i don't know if it's comparable to duck meat or if there's a big difference. i did try quail last december... umm i didn't find anything special about it. i believe you're into exotic dishes so if ever you would visit vietnam, you'll find that even hotels in ho chi minh serve rabbits, frogs, turtles and other exotic dishes in the regular daily menu. you'll never run out of dishes to try even if you stay a whole month there. hehe

The only duck recipe dish that I eat is the roasted one in Chinese restaurants.I'm not sure if it would work as adobo but for sure there will be need for herbs and spices to make it work. I may try the adobo with coconut milk because I tried Water Buffalo (carabao) meat in coconut milk and its good. I think coconut milk can neutralized some unwanted flavor.

I just had Goat earlier, its like my first time to eat goat and its so good but has lots of bones, I think think being bony is the reason why goat is not mainstream in our country and it might be also tricky to cook. I also heard goose is also a good meat, They said its very beefy for a bird,

I think not most of people like to eat duck is because of the smell, when it cooked it's alyaws produce smell and its weard. For me I very picky person when eat duck, I will eat when it cooked good and I didn't smell anything from the meat. I think thats the reason why dacks is less populer in your country even in other country.

Actually Duck is Popular in many countries, Philippines though is the least duck consuming country. We dont use much herbs in spices in our cuisine so it could be a factor why they dont know how to make duck meat work.

duck - Duck and ducklings
Duck meat is clean just as chicken meat is but I believe this is not widely eaten in many places in the Philippines because duck raisers do not normally sell their meat. They are after the eggs of the ducks which they make into balut or salted eggs. They are making money through selling eggs so they were not actually venturing on selling the meat rather. But in areas where duck raising is common, eating duck meat is very rampant.

It seemed like ducks in our country are luckier in our country than chickens ,though their babies gets aborted, there is small demand of their meat and liver. in europe their livers is a craze

For me it is not good because they are dirty they eat all dirty so if they are meat then many are not to eaten by it.

I think pigs were still dirtier than ducks, I think ducks have a bad reputation here in our country because of the way farmers raise ducks here.

Maybe the reason is it's very hard to kill a duck. I've tried to kill a duck once and it took me several minutes before it went limp. I tried cutting it's neck and it won't die. I tried putting a nail in its head and it still won't die. I've killed countless chicken already and I can't recall any of those anymore but that duck I killed is still in my head up to this very day. After that, it's only last week that I tasted a fried duck and it's delicious. The only concern I have with it is it has that peculiar smell every time I make bite so although I can say that it tastes good more than a chicken that smell is kinda turn off.

I agree. If the the cook can get rid of the smell by using a lot of herbs then duck meat is definitely a winner. Maybe that's how chinese cook had been doing and made peking duck that famous. I can't recall the actual taste of the liver since it's been a long time since I've tasted it and what I had last week was the wings. If you'll kill a duck you can cut it's head off but make sure that it's feet and wings are tied up pretty tight since it won't die easily. It's like a snake that even if its head has been cut off it's body would still continue to move for a couple of minutes before going limp.

Twisting a duck's beck won't do any good. I think it's got nine lives . If there's a way to make is die faster it should be by cutting it's head off so it loses blood. I haven't really tasted quail but it just a bird and bird meat is delicious and tastes just like chicken but then you won't get much of it not unless you have a dozen.

Do you think Twisting the neck will make killing a duck faster, It works for chickens, Guinea pigs and Rabbits for me. Another bird that is not mainstream in our country regardless of meat would be quail, I heard its good but not much meat, thats why farmers raised it more for eggs.

They are not usually sold in markets but here in our place, I can see some posts on houses saying they sell duck meats or fried or adobo duck.

I have eaten that long time ago....i think when I was still in elementary. It was kaldereta. I don't remember the taste of it anymore.

I agreewith the other posts here. I mean there are few receipes with duck meat and duck meat is indeed very high in cholesterol. Its got a lot of fat in it. Hehe. I love peking duck, though. And fried duck in salt and pepper.

People have always been squeamish with eating duck meat saying that it tastes bad or is tough. I am able to eat local duck that has been roasted (itik). But it is very lean and you hardly get any meat. Maybe this is also one of the reasons why it isn't popular as a source of meat or protein. I always wanted to buy either turkey or ostrich meat as a substitute, but these are very expensive here in our country considering that we do have farms here breeding these animals.

No meat is tough with a pressure cooker...LOL but I know not all Filipinos can afford it. I Think in Europe they raise ducks for the liver instead of the meat, because their liver can grow large. I love Ostrich, its a bird but it doesn't taste like chicken, It tasted like Beef.

i eat balut and duck meat. the main reason why i hate to prepare duck because i need a lot of time to cook it unlike chicken and pork. when you don't cook duck meat properly , it could just torn your teeth apart. anyways, Properly cooked duck is both uniquely tasty and nutritious. its really strange that we adapted on eating their eggs and fetuses but not the meat it self. yeah duckmeat is a lot of work, I think if our economy is better Filipinos will be more open on trying out herbs and spices they were not familiar with then next would be duck meat. But at this moment, yeah only the Chinese Filipinos enjoys the duckmeat the most because they can afford it and they have the knowledge how to cook this delicate meat. Lamb and goatmeat is also not common in our country, you have to go to specialty restaurants to have them.

Duckmeat is like the combination of beef and fish, so yes it really takes skill to cook it. If your interested on eating it, going to a Chinese restaurant is more practical than buying the meat because cooking it needs skill and knowledge.

Actually, duck meat still is a bit costly for the average Filipino. Dressed ducks sells from P280(US$6.20) to P350(US$7.75), which is more expensive than chicken, pork, beef and some seafood. Turkey meat is the most expensive one. Dressed turkey meat cost more than P1,000(US$22).

I wonder why turkey is very expensive here while in the US its very cheap. I know duck meat is kinda expensive, I only see them in Chinese restaurants but I never saw dressed ducks in the market or grocery. I see the eggs being sold though.

I think there are 3 possible reasons: 1. The price. Duck meat are more expensive than chicken meat. 2. The quality of the duck meat. It is tougher and harder to cook. I think the Chinese always roast the duck meat or use special herbs to hide the smell. Most Filipinos are practical cooks and seldom use special herbs because again, they costs more. 3. Ducks are harder to raise. Chicken can grow in cages, while ducks need open spaces (or bigger, wider cages) to run around.

I know we Filipinos have the most simple cuisine ever we dont use much herbs and spices. demand could be a possibility too, there is a huge demands for the eggs but not enough for the meat. it seemed like duck farmers here prefer to raise ducks for eggs.

For one duck meat is not readily available in the market. We cannot just go to the market and buy duck meat. It is only available in selected places. Also the supply of this type of meat is scarce making the price of this type of meat high and not within the reach of ordinary Filipinos.

yeah it could be the price, Plus I think most duck farmers are more interested in producing eggs than the meat. I wonder if a new meat that is very foreign for Filipinos will be sold in the market in a cheap price, would Filipinos adapt to that...

I think its because we pinoys have a perception that duck's meat is tough,malansa,and it tastes bad... though to some extent i would agree but with proper cooking techniques duck's meat is so delcious. My dad would always cook peking duck (since he's full blooded chinese) for special occasions like b-days,x-mas etc. He would always say that the key to make the duck's meat delicious and edible is how you would clean the meat and how you marinate it....

It would be hard work but I would like to try cookign peking duck by my self. So i wont need to go to a Chinese restaurant, I just dont know were can I buy dressed duck though and I dont want to kill a live duck on my own.

It's a tastebud of Pinoys that's count . The same time Ducks when it cooks is different means "Malansa" if you don't know how to cook it . It's better to use more Ginger in it and Chinese people loves Fried Duck here in North America it's a wide spread been eaten by people around here. I do love eating ducks but my family don't. Even Turkey it doesn't taste good on my tongue but still I ate turkey it's less fat than other meat product more protein and vitamins.

I also think we dont have enough herbs and spice in our cuisine,Its kinda weird because Spaniards invaded us for the herbs and spices. but when it comes to herbs we only use the laurel leaf. We only use oregano as a cure for cough and use Basil as a Bath for newborn babies. the spices we only use are garlic,chili, onion and ginger. while other countries use more. But yeah duck have gamey taste and only few knows to work them.
