Yesterday I was inspired by a dish I saw online.

I receive some mails from cooking sites and most of the time I put them away and forget to look again. But this time I was amazed by the beauty of a legume dish with veggies. I read the recipe and it wasn´t even difficult to make. I love legumes, but their colours are not usually on the bright side. They are yummy but nothing much to the eye. In this case they mixed several legumes (not too many of any, it was not soupy but more like a main dish) and parsley, baby spinach, tomato wedges and minced coriander leaves. The dish had a lemon wedge on the side, for the yellow touch. It´s wholesome, very cheap, no meat at all so it can be eaten by vegetarians and vegans too. I´m cooking it tomorrow, to try it out. I found that I had all the ingredients so I only have to soak a handful of lentils and chickpeas and start tomorrow with it. It does not sound difficult to make and my pressure cooker cooks the legumes in minutes. Wish me luck!

That sounds delicious! How did it turn out? I made a beef stew last night and it was ok, but I didn't have many vegetables to include in it. I will do better on the next one. Have a great weekend!!!

I am doing ok for the most part. I'm a little worried about the counts on the ca-125 (tumor marker) test because the numbers started going up again. It may be nothing to worry about, but I will have to wait and see. There is a possibility that I will be going to Mexico next month after I have my appointments next month. Have a great weekend!!!

I hope you go to Mexico, Debbie. I have gone there several times and the people are nice and there´s a lot to see. Where in Mexico will you be? It is such a great country! I always say that if I wasn´t chilean, I´d like to be mexican and live there. Don´t worry about the tumor marker. I try not to think about my own cancer as there´s nothing I can do about it except for what I´m doing as eating and cleaness goes. The doctors will tell you what to do when the time comes. Meanwhile, live and be happy. I am hoping that after my 6th chemo, the doctors and my body will let me go for a vacation. Who knows? Next week I have my third.

It turned out delicious but not as beautiful as the picture because I cooked the lentils and the garbanzo beans togeether. I won´t do that next time because lentils darken the broth. I had some left, not enough for a main dish for two (I have a house helper part time now)so I placed it in the blender, added more broth and served it with homemade croutons. YUMMY!!! How are you doing, Debbie? Please let me know your whereabouts now.

Hi marguicha, I hope you made delicious dishes with veggies. I always like bins specially french bean. It is delicious when a food item is made by mixed veggies with green chilies.

This dish was made mainly a legume dish. It did not have green beans but garbanzo beans (chickenpeas, lentils and fava beans.

It sounds really good and I think that I would like this recipe as well. I hope that you will share the recipe with all of us. I usually do not eat chickpeas, but I do like beans. I also like most of the veggies that you mentioned, especially the spinach and tomatoes.

It was a sort of mixture of legumes and veggies in a little beef broth such as you´d make a stew. I can´t put the recipe here but it was at a site called WebMDDAilyBite. I recieve dishes from them every day.

I hope that you manage to make your dish! I always get inspired by the things that I see online, but I never actually manage to make anything as I don't have enough time to go to the shops and get any of the ingredients. I tend to prefer baking things like cakes and fancy biscuits that I see online rather than full meals. I always have the things in to make cakes and things like that, so I find it a lot easier than making proper meals. I often invite my friends round to my house to sample the things that I've made, and they always say positive things about it, which I'm fairly proud of.

I´m more a person who likes salty things so I often make a very good main dish and just skip dessert. Lately I have had always a cake around (homemade) because I´m in chemo and I have sometimes sores inside my mouth. But my late husband was a diabetic for years, so sweets were not welcomed at home as he liked them too much and would eat some when noone was looking. I´m sur the dish will turn out fine. It looks awesome!

I absolutely love to see new recipes and I also really enjoy trying them out. The reason that I like to try out new recipes is because of the fact that I get burned out from eating the same old things all the time. Most of the time, I find the new recipes that I try out from food network online, but there are other times that I will find other recipes from all over the internet that I will try to make at home.

I have the same problem. And when they put pictures online, I get motivatd by the beeauty of the dish and I try to copy that too. A beautiful dish is a lot more appealing that a one colour one.

It turned out wonderful as taste goes, but not as beautiful as the picture. I discovered that I could not cook the lentils with the garbanzo beans as lentils give a very dark water. I should not have used that in the dish, maybe cook mor lentils and save some with the water for a nice lentil soup. I´m always learning as kitchen tips go.

goodluck. i too love eating legumes. my wife is a good cook and one day she tried boiling the black beans with pork cutlets. then when the beans and the pork are both tender she puts a lot of veggies to go with it. celery, onion, cabbage, potatoes and carrots. it does taste good. it was one of those meals that is easy to cook for you just let it boil and put the veggies on the last part, but it taste great. once again goodluck hope we can taste that cooking of yours. har har har

I love legumes with pork, but I´m not allowed to eat pork while on chemo. It seems that the cholesterol levels rach high lvels so fat is not permited.

It turned out yummy, but not as beautiful as I thought. I should not have boiled the lentil with the chickpeas. I´ll do it better next time.
