I attended a wedding ceremony last weekend and after that we went ahead to the reception. One of the desserts i enjoyed after we had the meal is cupcake with icing. It's really delicious and i think the chef used boiled icing to frost the cupcakes because it's stiff and it didn't melt at all. Mhels maybe you can try it too. :-)

I agree.it's not really boiled icing but you have to beat it in a double boiler so the added heat will cook the icing and it will no be ruined immediately

Ready to roll icing is good to put on cupcakes, you just lay it on the cake and press it down, you don't need anything to glue it on. You can colour the icing to make it look twice as pretty. I like making cupcakes and today I brought a piping bag and I'm going ot make some cakes later this week and pipe dome butter icing on them. I haven't used a piping bag for many years but thought I would try again since cupcakes is a very big thing now and I also watched a video on Tesco's cooking pages under tips on how ot ice cupcakes and thought I would like to try it. Hope yours go ok, make sure the cakes are cold before you ice them.

If you let the cupcakes cool before frosting it shouldnt melt. Also an idea is as soon as you pull them from the oven, put a couple of chocolate chips on the top. When they melt, spread them!

Key point is to make sure the cupcakes are completely cooled and room temp before you ice them with anything that you don't want to melt. Buttercream is my fav but cream cheese base is really good to.Both are tasty and you can use them in tubes for decorating. Or you could just buy the ready-made in the stores by Pillsbury or DUncan Hines...lot of flavors and colors.

i whip Jello with heavy cream for a fruity but sustainable topping to the cup cakes plus brilliant colors!
