There are many forms of poetry which are written in one stanza or verse. Perhaps the best known (and one of the most challenging) is the Japanese Haiku. This has the form of three unrhymed lines of five, seven, and five syllables, traditionally invoking an aspect of nature or the seasons. Actually, 'syllable' is not quite the correct term but, when writing haiku in English, this is the convention used. There are other forms of verse which commonly only have one stanza. The sonnet and the limerick are examples. In general, the fewer words you use to completely express an idea, the more effective a poem is likely to be. The best way to learn to write poetry is to study other people's poetry.

I see absolutely no reason that would you would not be able to write a single-stanza poem, Nyang. Formatting is almost entirely up to the writer, and freeform is perfectly acceptable. Poetry is not one specific style, but whatever we see it as.

Of course it's possible to write just one stanza. Are you familiar with the Haiku? It originated from Japan. It has 3 lines with 5-7-5 syllables respectively and it is about nature.Let me give you an example: Butterflies inside Standing on the edge, praying Time to take the jump by Ammon D. Try it.It's fun! :D
