Cooking Experiment Eggplant with Cheese and Eggs

Eggplant with Egg and Cheese - I cook eggplant with egg and cheese

Well I never thought I would love my cooking experiment this morning. I opened the refrigerator and found out that I do not have any thing to cook except for egg, eggplant and cheese. So I decided to mix these 3 stuffs together and I am satisfied with the taste. I fried the eggplant first with liver spread and insert some cheese on it then I put eggs to coat. Well the taste is good with some sweetness on it because of cheese and liver spread. This stuff is good for breakfast, can be mixed with rice on side.

I prepare fried eggplants many times as a side dish. I cut them in coarse rounds and fry them then I slow down the fire and put over them parmesan cheese and some dry oregao. They are terrific. YUMMY!!!

Sounds yummy already. Our house help asked my husband if we already tasted eggplant adobo. She said she will cook that instead of omelet. I'm looking forward to its taste.

interesting dish! :D may i suggest you roast the eggplants on open fire first then take the charred skin out by washing it out on running water :) it gives the eggplant an extra "omph" on the flavor side ;) then maybe put it on a baking dish and place beaten eggs on it and then topped with cheese then put it on a toaster oven or oven to cook! :D

good day jaderamirez, that's very good. you have the passion for cooking. who knows that will open-up another venture for you to start on. might be an eatery or a food shop where people can order their dine-in and take-out food. hence, this can be a good earning opportunity as well. aside from that, if you are taking pictures of what you cooked, then, you can classify it as food photography. who knows, another window of opportunity is opening for you to start on.

As a kid I didn't like eating prepared vegetables - boiled, fried, baked I was rejecting all of the great things nature supply us with. I wasn't eating even spices, I was always putting them away of my plate before I start eating. Now when I grow up I love all of the variety of vegetables. And it seems that I even love little bit more eating things I wasn't eating as a kid. Eggplants is a thing I don't do at home, just because I don't see a reason to cook only for myself. My boyfriend doesn't eat so many things, such like green beans, eggplants, tomatoes stew, stuffed pepper. He loves the most meat. Sometimes I have thought to mix pork with green beans, just because I am dying for green beans, but I know what he will do - he will just eat the meat bites and leave the green beans for me.
