What to Make for Supper...Oh Wait there are Leftovers..GOOD.

I'm not one who finds much enjoyment in cooking, the less I have to do it the better! I will purposely prepare meals with a bit left over to put in the fridge for left overs for the next night. Do you have a lot of leftovers at your place? What kinds of foods do you like to make which will last as a left over? Thanks for commenting.

I like cooking a lot. But I have many delicious foods in my fridge, such as cakes, biscuits I made myself, some cooked meat, fruits, some fresh vegetables which can eat directly such as tomatoes and cucumbers. I think all these things above can last as a left over. Just my opinion. Thanks for sharing and enjoy your leftovers:-D

Those do sound like good leftovers, does the cake stay somewhat fresh even as a leftover?

Two- three days isn't bad at all, I'm sure we'd have it demolished well before then..haha.

I try hard not to make too much food because leftovers are not a favorite in my household. There are a few exceptions. Lasagna and chicken are big hits for the men in my house. As for me, I love taco salad after sitting for a day. It blends all the flavors together nicely. I do enjoy cooking, but at times I just don't have enough time in the day to make a proper meal. So I make a point when I make some of our favorite meals I double or triple the recipe and freeze for later use. Lasagna freezes well as does meatloaf. I also make large batches of french toast and put each slice individually in a sandwich bag to freeze. Take out in the morning, place in toaster and tastes just like you cooked it right of the stove. Like I mention, leftovers are not a favorite but I hate to let the food go to waste. My solution is to have a container in my freezer and I dump all meat, veggies, potatoes and any sauces or gravies. By the end of the week or whenever it is full I make a dump it casserole. Put all the contents into a crock pot and instant dinner. I must add, you never get the same results twice. Some are better then others, but some of our favorite meals come from my dump it container.

Left overs make us save time if we are in a hurry. Preparing foods which don't get spoiled easily are helpful. Pork or chicken adobo is our favorite meal. It lasts longer than others. Happy myLotting!

Chicken is one my my favorite things to have as a leftover, you can save it and use it in so many different kinds of ways ( stirfry, sandwich, etc).

Coincidentally I've just finished cleaning up our refrigerator. Some of the leftovers I've put in the trash just a few seconds ago was more than a week old. Disgusting. My mom says I should never eat food that has been left for 24 hours--unless they are frozen. So I like cooking meals and freezing them. I'll reheat when I come from work or I'm too lazy to cook a new dish.

I always get so mad at myself when I've let stuff sit in the fridge for so long that it spoils, such a waste of decent food.

Yeah we do that as well. Mum and I cook a whole packet of ravioli or something like that and put the leftovers in the fridge for the next 2 or 3 nights even. Makes it easier to just cook it up in one lot than to have to do it every single night. Saves a lot of time too

As much as possible, I make it a point to cook just enough for all of us for a meal. If ever there will be leftovers, I'm hoping that these will be eaten on the next meal when reheated. But sometimes, relying on the fridge to store leftovers cannot be avoided. I actually took a pick on my fridge after reading this discussion, lol! Right now I have leftover chicken barbecue and slices of bananas which my sister used for banana bread yesterday and a couple of ham. I prefer preparing chicken adobo; this dish gets even more delicious when reheated. When shredded, this also makes a good chicken sandwich as well as toppings over fried rice. It's got soy sauce and vinegar that's why it doesn't spoil easily.

Some foods spoil so quickly in the fridge, I try to make things that I know will last nicely in the fridge for atleast one day.

Oh, I enjoy cooking. The foods I prepare that are most likely to have leftovers, since I prepare large batches, are my vegetarian chili, tempeh stew and vegetable soup. I find that the vegetarian chili is especially great when reheated, or I will even eat it cold (as my boyfriend blanches at the thought of eating veggie chili cold).
