I took a mylot members advice regarding leftovers today.

I had alot of beef leftover from yesterdays pot roast. So I took a members advice and made roast beef sandwhiches. I now need an idea of what to have with them? Help me please.

I love coleslaw! That goes well with any cold meat. My father after a roast dinner on a Sunday always has cold meat the following day with coleslaw and bread and butter, of course we give some of the cold meat to the cat as a treat!

I have made it myself before using shredded carrot, onion and cabbage and adding salad cream or mayonnaise, you can also add potatoes to make it a potato salad. other things can be added to your taste too, like celery and apples, even walnuts, but with beef I think plain coleslaw would be best and preferable.

I think Roast beef sandwich would go very well with a vinaigrette salad. This would eliminate the use of salad dressings coz you have already made use of mayonnaise with your sandwich.

I usually use meat leftovers in various ways: you can stir fry small cuts of beef with any vegetables you like, add some pineapples and lemon and you got sweet and sour beef. If you use pepper,chili peppers, and tomatoes you will get spicy beef. I'm Indonesian, and we love fried rice. You can always toss in any meat leftovers to create unique taste of fried rice. You can also cut the beef in small chunks and use them to create a different version of beef soup.

You can make creamy potato soup if you want since you have potato or vegetable soup. You can add those vegies on your ref that's on the edge of getting to be dispose...

How about hot open roast beef sandwich. Put some beef gravy on the beef, lay the beef over some thick toasted bread. Maybe italian bread. And put some onions on it as well. Onions go well with beef. And of course of there is any potatoes left make mashed potatoes. Nice!!!
