why Muslims sacrifice in Eid al-Adha ?

That is true, when Abraham (Ibraheem in Arabic) saw a dream that he sacrificing his only son Ismail, he told his son, the son said to his father: do what you ordered, Ibraheem gone with him to sacrificing him, Satan tried to make him not obey ordered of God, he thrown on satan some stones , when he star to sacrificing with his son , Jebreel come down with a sheep , and gave it to Ibraheem to sacrificing with it instead of his son .
this story mentioned in Quran :
[37.101: 107]" And We gave him the glad tidings of a very gentle son (Ishmael).
And when he reached the age of traveling with him, he said: 'My son, while I was sleeping I saw that I shall slaughter (sacrifice) you, tell me what is your opinion. ' He replied: 'Father, do as you are ordered (by Allah). Allah willing, you shall find me one of those who are steadfast. '
And when they had both submitted, and his son had laid down prostrate upon his forehead, [37.104] We called to him, saying: 'O Abraham,
you have confirmed your vision. ' As such We recompense the gooddoers.
So, We ransomed him with a mighty sacrifice" .

Muslims sacrifice on Eid-al-Adha in memory of the great sacrifice done by prophet Abraham when he dreamed that he is sacrificing his beloved son Ishmael and knew this is an order for The God. He decided to actually sacrifice Ishmael which was replaced by a sheep at the very last moment by Allah. Allah liked this gesture from Abraham and ordered Muslims to practice sacrifice of animals in the momory of His friend Abraham peace be upon him.

I am not Muslim, but I have a lot of Muslims friends. They said, they sacrifice and slaughtered the cows and sheep to share their meat to those who are not lucky enough to eat meat in the other days so on Eid Al-Adha.. the poor can enjoy meat. The meat is given free to people.
