Been cooking today

I've been cooking today. I made BBQ for tonight's supper. I roasted a pork roast on low heat and then pulled it in the food processor. I have a plastic blade that pulls pork beautifully. Then I put the BBQ sauce in mixed it well with a pulse on the machine. I also made a meatloaf that is large enough to split, so I give my family 2 meals on the meatloaf. My family loves my meatloaf. Ill make some beans and rice for another meal. I have 2 containers of soup frozen that I can thaw and serve. It will be tight for the rest of the month, but I can make biscuits and gravy, pancakes and eggs to maybe see us through. How are you making out for the end of the month? If you have to scrimp, what are you serving?

I am not sure yet, I think we have enough food in the freezer but flat broke because of the cat. I am happy the cat is going to be alright and that it really didn't cost a whole lot of money but it took the house money never the less. Now he can only eat those expensive cat foods, like science diet. royal canin, nutriscience and iams.

We don't ever buy Iam's since a few years ago when it was all over the TV it was contaminated with something. Good thing you have plenty for now.

Have all the stuff ready to prepare for Thanksgiving. This week my son cooked. He made two trays of meatballs that we will freeze most of and leave enough out for two meals. He also made Salisbury steak with mushroom gravy, mashed potatoes and corn. And it was great. I made a huge pot of tomato sauce with sausage and pasta. The sauce we will have at least 4 times so half will get frozen for another time or two. If I don't talk to you before hand, I want to wish you a very Happy Thanksgiving! Enjoy your family and friends and watch what you eat so you will have a wonderful day and not miss any part of it.

Thanks Bev. You have some wonderful meals. We will be having Thanksgiving with SIL's aunt and uncle. I'm bringing a pumpkin pie. Ill be cooking for Christmas.

Sally I will also be cooking for Christmas. We just went out this week shopping for a few odds and ends we needed and found a whole ham that we couldn't pass up. It was on sale so we purchased it and put it in the freezer for Christmas. Then I will be doing a lot of baking. Cookies, cookies and more cookies. Then other goodies too besides all the sides. Those I will have help with so that will save me time, energy and back strain too. Looking forward to some time with my husband...he really needs some time off to relax.

That sounds so good! I love pork steaks, pork Barbecue, ribs, etc. I always like meatloaf too. You are making me hungry and I just ate. hehe If we have to scrimp it will probably be whatever is in the cupboard. I think there is some hotdogs left and tuna fish. The neighbor gave my daughter two food baskets because they are foreighn and do not use our american foods. So we will have canned vegetables and fruit to eat from that. There was also another turkey so that will be good. We have eggs too so many fix eggs and tuna one night if need be. We'll have turkey for a couple of days. We should be okay.

You mentioned tuna and eggs which reminded me of salmon and eggs. Have you ever eaten salmon that us scrambled in eggs? Kim and I like it, but Sean doesn't.

well thats wonderful that you can still do all that cooking and all. i cook some on good days but most days i cant stand around and do all the prep. the kids take turns mostly. we share food money so that helps. but i ended up buying most of the thanksgiving dinner we are going to have. are you eating elsewhere? or having yours there?

We are going to a relative's house for Thanksgiving. We all bring something. I'm doing Christmas dinner here and everyone will be coming here.

Yummy!! reading your discussion made me hungry.. can i have some?? ahah just kidding! For me i only cook rarely since whenever i got home my mother in law already done with the cooking. I just cook when i am in the mood of cooking and also when there are things that i like to eat.

Your post reminds me of my dad. He was the cook of the house when he was alive and well. I never had to cook. I was in the mood today and just made the meatloaf too. Split it in half and wrapped up in foil.

Wow! They said that when a man knows how to cook they really are tasty and delicious. I bet you got you interest in cooking from your dad. I hope one day i can learn more strategies in cooking.So that one day when i am already in charge of the meals i can serve my family wiht unique and delicious foods.

It all sounds so very good. I love to cook up several things at one time and then the work seems much less. I have not had to scrimp, but I still like to save money and time where ever I can. We will be away for Thanksgiving, so that will be this Thursday and Friday. We have eggs, and hubby makes up huge batches of sausage gravy and we freeze it. We use a lot of potatoes.I always buy them on reduced. I bought one of those boneless hams that is $7.98 for six pounds. Cubed half of it, sliced half of it for sandwiches. I had made homemade pizza dough and we used ham, instead of Canadian bacon on it. We will have ham and beans. I have soup and stew in the freezer, and pancakes in the refrigerator. I have a lasagna in the fridge. . . I always make a big one and we get about three meals or even more from it. Oh, I have a pork loin that I cooked with Mexican seasoning and made pulled pork and it lasted us a number of meals.

Good idea about the ham. I think I will look for a bargain on ham for sandwiches. Buying cold cuts is so expensive. I am like you. I live getting more than one meal out if something I cook.

I'm running low on food too I don't have much left to cook anything until I get paid and that's even If I have money left over after paying bills to buy groceries. I made eggs and toast tonight for dinner since I don't have a whole lot to cook anything else. Tomorrow night my boyfriend and I our making a baked spaghetti casserole I have all the ingredients but 2 things so hes bringing over the 2 I need so we can make it. I'll just be eating sandwhiches and noodles until I can buy some food again. I never go hungry though I just don't have money to buy a whole lot because my bills come first. Your meals sound really yummy and making me hungry. I hope your family enjoys them.

I made toast in the broiler to go with it and also potatoes. We don't have any green veggies, so I do the best I can with potatoes.

PQ, your recipe sound very delicious to me. I like meatloaf a lot and waiting to taste yours if i have the chance to travel in future. Indeed, you are planning very well, to get all of you through until the end of the month. I am planning very well, as what to buy and eat for all the meals, to make sure we can still eat well until the end of the month. It is very pity if one of the days we are unable to eat well due to wrong planning. Have a nice weekend...

You're doing a lot of cooking and it all sounds really good! I love pulled pork - I can eat it without the sauce - yum yum yum!!! And meatloaf is a great food stretcher . . . you can add bread, egg, and all sorts of veggies to make it "bigger"! I've seen ones that have boiled eggs in the center, but haven't tried that. I know things are tight over yonder, but sounds like you're making it work. We're doing pretty good - cannot complain about things this year. I lucked out with Thanksgiving this year. My parents are doing the turkey, as usual, but it's up to use to do the rest. I actually won a Facebook contest from a farm last week and the prize was 3 winter squashes of my choice . . . so guess what, I'm making squash dishes this year - ha ha. One squash can go a long way. I'm planing to make kabocha flan (like a pudding), kabocha soup, roast the seeds, and one other side that I haven't thought of yet. In any case, I can do it with stuff I already have on hand, so this made it tons easier (and saved us $!). Happy Thanksgiving to you and family, PQ!

I admire your stretching money to keep within a budget.I have never seen the meal loaf,let alone eating it.It is surely good to eat.I imagine it is like the meat pie.You know,cooked rice is our daily food.
