Since i won't be cooking for our Media Noche tomorrow, i plan to make a refrigerator cake, which i haven't ever made before. We already have fruit cocktail, condensed milk and all purpose cream so it's just Graham crackers that we are going to buy. From what i was told by my office mate, it's easy. I just have to first line graham cracker as a lining and then top it with all purpose cream mixed with condensed milk, then top it with the fruit cocktail ( drained) then top it again with all purpose cream mixed with some condensed milk. Then repeat another layer of that then place it in the freezer. Anyone please who have prepared a ref cake? Can you please share to me how to do it? I really hope i can make a delicious one because it's my first time to make it.

Hello simplyd. It has been an hour since I had red this discussion that you had made. So I guess by now, you had done making it? What you had said is right in making a ref cake. I make my ref cake with only fresh sweet mangoes. I guess your ref cake will be so delicious because of the fruit cocktail. Advance Happy New Year!

Actually i am going to make mine tomorrow morning. Do you think it's delicious, instead of using ripe mangoes. I have to make use of what is available, so we don't have to spend anymore.

It's just like preparing a mango flute. It's very simple to prepare. I think my mother-in-law did it last Christmas. Today, my wife will prepare macaroni and fruit salad

Yes, it's easy to prepare. I made one this morning . Even if there's some anxiety in me since it's my first time to make, i managed to do it. I am waiting for the result tonight, when everyone will eat it as part of our media Noche. I hope they like it.

Actually, that is also what I had in mind to make. But I think what you want to do is not called as Refrigerator Cake but more of like Crema de Fruta. Coz from what I have learned from my grandma, Refrigerator Cake is made up of Lady fingers and butter with sugar. They are done placing a layer of Lady Finger then a layer of butter and sugar alternately. You can garnish it with cashew nuts on top. That would taste like Sansrival. For the steps on how to make the Crema de fruta, check this link: http://kerlynb.hubpages.com/hub/Easy-and-No-Bake-Recipe-for-Philippine-Crema-de-Fruta-the-Christmas-Cake-of-Filipinos

But it's hard to find lady fingers here in our place. I will just experiment with this, so the cans of fruit cocktails will be used worthily. I really hope i can make a delicious one.

Thanks for sharing dear Dina. I don't know exactly what you mean by this cake, but on night of 30th i made 6 cakes, they are vegetarian cakes, no eggs used, i used milk cream, pure ghee made from cow milk, cherry etc, i left 2 in home for grandkids, brought 3 here to Hyderabad for grandkids here; one i cut and distributed in the railway compartment at 00.00 hours, all liked eating it.

I have made graham cake before and I just did a huge batch hours ago. It's quite simple and actually, even kids can do it. Just like you said, you layer the graham, cream&milk and fruit and repeat the process. I have never tried using fruit cocktail before. I always use mangoes. A tip to make it yummy: adjust the sweetness of the cream and milk combination a notch higher than the sweetness you like. Freezing the cake would make the sweetness notch down a bit. I also buy crushed graham and top it on the cake. This time I whipped the cream and the milk a bit so it would be a bit thicker and fluffy. It turned out really nicely. I prefer putting a lot of the milk and cream combination because a dry refrigerator cake does not taste so good. If you have any more questions about, I will be happy to help you. Good luck in the kitchen! :3

I have already made the graham ref cake this morning. But i forgot to the top the mixture of fruit cocktail the crushed graham. I already placed it in the refrigerator for about 3 hours, but a while ago, i placed the crushed graham on top. Better late than never, so they say. I really hope it's delicious.

It takes really short time to turn cold so I think even with three hours, it will turn out okay. If you're in a hurry, place them on the freezer for an hour and place them back on the fridge for the rest of the time. I created a refrigerator cake last night and had it for dessert this morning. It was delicious. :3

I've never made that. Actually, the last time I had fruit cocktail about, it was because my mother gave me a can; if I recall correctly, my housemates and I ended up throwing most of it out. Hopefully, your dessert turns out well. The only no-bake desserts like that I've ever made are no-bake cookies and peanut butter balls. Reading this post sort of makes me want to get the ingredients for the no-bake cookies; I haven't had those in what seems like ages.
