What is your favorite vegetable?

I like pasta with broccoli!! I like vegetables.. in particular courgettes and aubergines.

I think parsnips are my favorite vegetable. I love them roasted but parsnip soup with a touch of curry powder is also very good. Strangely enough, although most people think of them as a vegetable to have with meat, they also make a very good pie filling, rather like a pumpkin pie - a sweetened puree in a pastry case and served with cream.
