The Reuben Casserole, before I forget

I know that a few of you, like @fishtiger58 are waiting for my report on this casserole. It was on facebook, posted by 12Tomatoes as a video, but there is also a link to a print version. We called it 8 servings. It reheats well. I bought sliced Swiss cheese cause I did not want to shred it, but shredded makes a better casserole in my opinion. We loved it, and served extra Thousand Island on the side the way some people serve catsup It has great flavor, and those with fewer people to eat it could probably make a half recipe. We used pastrami. @ElusiveButterfly you may want to do that. What I especially liked is that it has less bread than a traditional sandwich. For the equivalent of eight sandwiches we used six slices of bread. Use your favorite rye. The video shows dark rye. I am working on ideas for other sandwich casseroles, because I am trying to limit the carbs associated with bread but I love the convenience this represents. Let us know if you try it.
You'll never believe how good this sandwich is as a casserole!

Well, I have all but the bread and pastrami, and maybe I'll have to buy the thousand Island dressing too. I'll get all of that when I go to Aldi tomorrow. The pickles and caraway seeds will be left out. We aren't fond of pickles and I can't eat the seeds. Can't wait to give it a try. Hubby will be in hog heaven. Thank you GG!

Yeah, I do not think either of them are necessary. I like that it does not require a lot of fancy stuff. It is a good husband pleasing meal.

I've never heard of a sandwich casserole so will be watching this but maybe not just now. We have our second outdoor concert tonight so I'm mindful that I should be doing other 'stuff'.

We stopped eating bread on a regular basis a number of years ago. The alternatives on the market today are so varied, and so healthy. We like the thins, those "hamburg" type buns that we can make a tuna melt on, and actually taste the tuna, the whole wheat wraps, that are thin enough to let you taste what they are wrapping up. Now.....I'm hungry for a wrap, and my kitchen floor is wet because I just mopped it....oh no-I hate it when that happens!

We do several of the other things as well. I like the kinds of bread that have good flavor and texture. I am not mopping today, but I am stuffed full of left over meatloaf.

@GardenGerty I have a small pot of chili on for supper, its a snowy, cold and blustery day here today. When my hubby came into the house from work, he sniffed the air, and said, oh what a perfect day for a nice hot bowl of chili.

@GardenGerty I forgot to buy the pastrami. LOL. I plan on making it for us maybe by the weekend. That is if I can remember to put pastrami on my shopping list.
