Enjoyable Afternoon

I have to say that it's been a lovely day! We did have a downpour for a little while, and I heard rolling thunder for well over an hour while the sun was shining. But now it's quiet and gorgeous. I've been prepping veggies for a while. I'm making my Shepherd's Pie but with sweet potatoes. Everything has now been cooked and I just have to put it all together and bake it for a while. I'm SO hungry! I had a couple of eggs for breakfast this morning. I made them sunnyside up but added onions and peppers for more flavor. I toasted some multi grain bread that I got from the food bank and it was a great breakfast. But that was almost 7 hours ago, so I guess I need to eat something! lol Hope your weekend is going well! -Claudia- image from pixabay

Shepherd's pie sounds good! My youngest daughter was here for lunch and she is still on antibiotics so can't eat well. I made potato soup with tuna in it and she ate a whole bowl full so that was good. I am having leftovers for dinner. I can go several hours without eating, but once I eat, its all over!

mmm your soup sounds wonderful! I normally don't go this long between eating but I guess the heat has been keeping me drinking ice water so much that I just didn't feel hungry! The good news is that I never went to take a nap like I normally would have. The sleep plan is working!

Shepherd's Pie sounds really good. I haven't had it in a while and I've never had it with sweet potatoes. I get it's good that way.

I enjoy changing up recipes and I've found that this particular recipe tastes (to me) so much better with sweet potatoes. I also make it with ground turkey quite a bit. And that means spicing things up a bit more than I normally would. So the sweet potatoes also lend some much needed flavor there, too.

gonna be mighty hearty 'n healthier, that shepherd pie since ya used those sweet taters :) yepperz, 7 hours with nothin' to eat aint a good thingy, hon. i'd been nibblin' those veggies, lol. glad'ja got some rain. none'n these parts, but the day was gorgeous. 'til sundown anyhow, when the winds decided to whip'n whirl 'n continue to do such.

Sounds like an interesting variation using sweet potatoes instead of regular ones for your Shepherd's Pie. Do you pre-cook them and then mash them before adding them with the other ingredients? Maybe you should take a picture sometime and then add it to this or a different post. I'd like to see that. Many of us are always looking for different ways to make things to spice up our palates.

It sounded off looking an unpromising day, but the sun did put in a prolonged appearance and Mr B spent the afternoon snoozing on the window sill. Excellent idea, moggie!
