How do you use tomatoes, when your over run with them???

Do you garden, do you have TONS of tomatoes? I have a few tomato plants and we have been getting a lot from the csa we work at, so I am making pasta sauce tonight, yes I know pasta sauce is cheap but homemade is good and I HATE wasting food. What are ways you use up your tomatoes?

I have been simmering the tomatoes and then freezing them plain. So I can use them for soup or pasta sauce.

I can 300 pounds or more of tomatoes every year. My girlfriend freezes hers and uses them for sauce later on. Both book to preserve the crop.

I don't buy too many because they go bad too fast. I use them on sandwiches, and on top of pizza.
