What's for dinner? May 2

Hey everyone! What's going on your dinner table tonight? I want to know! I am making pork tacos! We are trying something new! I have a pork tenderloin but I want to do something different with it, so I'm going to rub it with some seasoning and grill it. Then I'll slice it thinly and serve it it on warm tortillas with traditional Mexican toppings for tacos: chopped onion, chopped cilantro, avocado, queso fresco, and lime wedges. I might chop up some tomatoes and have them as well. To go with it I'm making Rick Bayless' Gulf-Style White Rice. It is sooo good. I haven't made it in over 6 months so I'm going for it tonight. Yum! That's what's happening here. What are YOU having tonight? Do tell!

@Courtlynn My husband hates TGI Fridays, I hate Olive Garden, Applebees, and Bahama Breeze. The only chains we very rarely visit are Chili's or Red Lobster. Most of the time we just go to the independent bar/restaurant near our house which is so much better than a chain.

NJChicaa I went back to meat. What I had was marinated chicken that I bought at the store this morning in I also bought cole slaw Then I bought a blueberry pie. I have two pies one blueberry nd cheers frozen have to have my sister find and blueberru from my nephew's pie selling for the Boy Scout sale.I think your dinner sounds Heavenly!

@NJChicaa you know thats funny you say that. I think its an acquired taste. I make spinach salads and at first I thought it tasted very....earthy. now i cant stand iceberg and romaine is blah. Im addicted. Lol. How do you cook baby spinach?
