What's for dinner? May 2

Hey everyone! What's going on your dinner table tonight? I want to know! I am making pork tacos! We are trying something new! I have a pork tenderloin but I want to do something different with it, so I'm going to rub it with some seasoning and grill it. Then I'll slice it thinly and serve it it on warm tortillas with traditional Mexican toppings for tacos: chopped onion, chopped cilantro, avocado, queso fresco, and lime wedges. I might chop up some tomatoes and have them as well. To go with it I'm making Rick Bayless' Gulf-Style White Rice. It is sooo good. I haven't made it in over 6 months so I'm going for it tonight. Yum! That's what's happening here. What are YOU having tonight? Do tell!

Sounds fantastic! Since it's so nice out, we are grilling ribeye, baked potatoes, and some veggie. I have to run outside and snip some chives now.

That sounds wonderful. That's what I'm going to do tomorrow. I pulled the steaks out of the freezer tonight to thaw.

@diannen grilling sounds so good but I haven't even gotten the gas for my grill yet. The weather has been so iffy that it didn't seem like a priority. Enjoy your steaks

@Courtlynn My husband hates TGI Fridays, I hate Olive Garden, Applebees, and Bahama Breeze. The only chains we very rarely visit are Chili's or Red Lobster. Most of the time we just go to the independent bar/restaurant near our house which is so much better than a chain.

@NJChicaa you know thats funny you say that. I think its an acquired taste. I make spinach salads and at first I thought it tasted very....earthy. now i cant stand iceberg and romaine is blah. Im addicted. Lol. How do you cook baby spinach?

@maezee I eat romaine lettuce salads. haha I saute baby spinach with extra virgin olive oil in a pan that has lots of chopped garlic. YUM.

Last night, I made stuffed bell peppers (with ground beef and rice) , topped with tomato sauce and cheese. They are baked at 350 degrees for 45 minutes. It always turns out so tasty and perfect!

oh yum! I make the best mac and cheese. Haven't made it in ages. We are going to fire up the smoker soon to do a pork shoulder and ribs. I will make my homemade mac and cheese and homemade cole slaw as sides. I can't wait!

Tonight we're having roasted turkey, gravy, mashed potatoes, stuffing and some sort of vegetable. I found a tupperware in the freezer with all the fixings so all I have to do is heat and eat.
