What's going on the dinner table tonight? I want to know!!!
I'm trying a new recipe tonight: Smoky Pork Tinga Tacos with Avocado and Fresh Cheese. It is from my Mexican Everyday cookbook by Rick Bayless. I have so many cookbooks and so many recipes that I've never tried so I selected a few from this book to try this weekend/week. It is supposed to be made in a crockpot but I don't own a small one, so I'm going to try to do it in my InstantPot (pressure cooker). That cuts the cooking down from 6 hours to like 1.
Anyway this recipe has potatoes, cubed boneless pork shoulder, chipotle peppers (smoked jalapenos), onion, fire-roasted tomatoes, garlic, Worcestershire sauce, oregano, and salt in it. You cook it all together. Then you put the filling in tortillas and top with chopped avocado and queso fresco. I can't wait to try it!

Your recipe for tonight looks very appetizing
I was lazy this evening and did not wanted to cook. I just had 2 toasts with duck rillettes, 2 with cancoillotte (it is a kind of half liquid cheese made on the Swiss border and smelling very strong, but good), and a piece of "tarte Normande", a kind of apple cake.

Your dinner sounds good we had pizza tonight it was to warm to turn the oven on and we had company up to dinnertime so we decided on pizza tonight.
