@1creekgirl the way my mother did it is to take left over masked potatoes and shape it like a pancake. She would then cook it like she would a pancake.

How do you cook your potato pancakes? I use cold, left over mashed potatoes, add a little flour, salt and pepper (sometimes some chopped onion, shredded cheese or fried bacon.) Then I scoop in into little mounds, roll in flour, and fry in hot grease.
