The salad is finished

I'm sitting down for a minute to give my back a few minutes of a break. The Carmine's salad is finished. It gets its name because it is from the Carmine's cookbook which comes from the Carmine's chain of restaurants. They can be found in New York City, Atlantic City, Las Vegas, Washington DC, and the Bahamas.
It is basically a big antipasto salad that contains: iceberg lettuce, radicchio, cucumber, radishes, red onion, tomatoes, medium provolone, fresh mozzarella, salami, green olives, black olives, and pepperocinis with a sprinkle of dried oregano over the top and served with a lemon vinaigrette. I've been making it when I entertain for years and it is always a huge hit. It isn't hard to make at all. You just need patience for all of the washing and chopping.
Now I'm on to finish up the coconut cake project.

@Happy2BeMe When I am entertaining, if I do Italian I make a pan of Carmine's lasagna, this (Carmine's) salad, and a big pot of meatballs along with some bread and butter. Everyone is very happy.
