Can't Wait For Dinner

I got an unexpected burst of energy this afternoon and decided to make eggplant parmigiana for dinner. I've been looking at these two eggplants sitting here for the last few days and didn't know what I was going to do with them. Thankfully my burst of energy is giving us baked eggplant parmigiana and my daughter will be so surprised when she comes home from work as she's expecting boring old burgers. The house smells so good and it was worth the effort. I can't wait to eat

@Marilynda1225 I wonder why I make it more during summer than winter. May be because the eggplants are cheaper in summer.

It's something I really really like too but hardly ever make it. When I do I wonder why I don't make it more often

That sounds good..The last time I made that, I ended up gaining some weight..and I really didn't think it was that fattening..so I haven't made it since. I guess I need to find a lower calorie version.

I use low fat mozzarella but yes, it's a high calorie meal but a small portion is pretty filling. I don't eat it very often but it's delicious

@Marilynda1225 The problem is it makes tons..I don't have people here to eat it. Even if I made it when I had visitors there would still be a lot left over.

That sure beats boring old burgers! I never tried parmigiana, but it seems a bit similar to moussaka, that's one of my favorites.

Sounds a whole heap better than burgers! It's strange how we can get a burst of energy occasionally. Mine usually follows the announcement that we're having unexpected guests!
