Our friend Always smiling prepared a tempting bimbli pickle. The same recipe can be applied to make a star apple pickle. It can safely be eaten for a week. Perhaps with preservatives and proper packing it can be preserved for longer time and also commercially marketed. So far, I have not found any star apple pickle in the market. I wish, somebody could take it up.

Excuse me my friend but I think you are referring to star fruit, the one in the picture which is sour and often pickled, star apple is different, it's a sweet meaty fruit

@franxav yes its alright my friend, true its " balimbing" but a similar fruit related to it is called balimimbi and we call it "kamias"we have a star fruit tree in our garden, will post a picture for you tomorrow when it's not dark. Star apple is a different fruit but I do not know what it is called there, its called " kaimito " here, its sweet and eaten nothing more but as dessert.

It must be a tropical fruit not found in colder place. It sourish with lot of watery juice inside. It gets a little sweet when it ripens. For pickle green fruits are best. The pickle is sourish. Added with pickle spices and a little sugar it tastes sweet sour. A good appetizer, it can be eaten with bread or rice. Avoid milk after or before eating this pickle.
