February Crockpot Recipe Report Card

Well February came and went, while March prowled like a lion this week and now this weekend. Although a few days late to report this, I've selected my crockpot and bonus picks for March and had completed all of my chosen recipes, except for one in the nick of time. I've had a few hits, one miss and an incomplete. But better late than never, right? Here's a rundown of my dishes in no particular order: 1. Spaghetti Aglio e Olio--A+. This was the first dish I've made, after I've made my online order at Acme and had it delivered on the same day. This was so easy and delicious to make and filling too. Since I had no leftovers, next time I'll make enough for two settings and double the ingredients. 2. Crockpot Lemon Pepper Chicken--A -. Although I'm not a big fan of lemons, this easy dish was delicious and scrumptious too with three simple ingredients. It must've tasted better with regular chicken breasts, except for it being cut thin. Leftovers was very good and paired with tri-colored quinoa, too. 3. To Die For Fettucine Alfredo--A-. Another easy pasta I've made for one serving and the Alfredo sauce was easy to make too. Somehow I've added a tiny bit more salt than it required and made it salty. It was also filling without any leftovers. Next time I'll make a batch, it would be less salty and have a better score. 4. Crockpot Garlic Ranch Mashed Potatoes--A+. I never made mashed potatoes too and had a bit of a snag, when I need my potatoes to be boiled more, when I made it last week. But it was so simple and easy. With one potato, I've made enough for two nights of leftovers--one for tonight and one for hopefully next week, if it doesn't go bad. 5. Crockpot Strawberry Breakfast Cake--Incomplete. I've checked it with my brother two weeks ago and asked him if he had found the muffin mix I needed. He said he doesn't shop at Walmart much, though my SIL shops there online for groceries. I wished he told me last month, when I mentioned it out to him. Last week, I've brought it via Amazon (the same price at Smucker's and cost me a little over $7), and had it delivered on Thursday. I made it this morning and will add it for March's recipe report card in a month from here. 6. Pasta with Pine Nuts, Bacon, Cheese and Lemon--A+. This recipes from New York Times was a smash hit, when I made it this week. I never made lemon zest before, but it worked out well with my grater. I've made a lot of pasta for one filling on a plate, though I've could've saved half for leftovers if I wasn't so hungry. Next time, I'll go easy on lemon and garlic. 7. Crockpot Bacon Ranch Meatloaf--A+. Just like the Swedish Meatloaf I've made it last year, this meatloaf was yummy and scrumptious with ground turkey. Another easy dish to make and tasted so good. I'll be having leftovers tonight and will add my rating for my March report card too. 8. Crockpot Steak (Chicken) Mushroom Soup--A-. If my chicken breast wasn't thinner, it would've tasted better. But the chicken tasted great with replacing the steak, even though I didn't swap the beef broth for the chicken broth. It was tasteful and hearty for a cold evening to have dinner. I'll be happy leftovers on Monday night (right after Pilates and before my late night grocery shopping with my brother). I'll add my leftover rating for this month's report as well. 9. Crockpot Red Velvet Spoon Brownies---D. For the brownies itself and the frosting, I've added too much salt to the recipe by accident. Needless to say, I've tossed it in the trash and had no leftovers. But I'll redeem myself with it this month and try it again with less salt. As for this month's recipes, I'm bringing back some of my favorites I've made from last year. Since I'll be do a big major grocery shopping on Monday night (and no mini shopping this weekend), some of these recipes I already have the ingredients, and some I only need one or two to pick up. Plus, since this is the final month before Lent is over, I'm stocking up with new pasta recipes from All Recipes and Yummly to try this month. I'll be doing an ahi tuna recipe too. 1. Crockpot Hawaiian Chicken. I just need the cream of chicken soup to make it. 2. Crockpot Easy Orange Chicken. I'll be making it tomorrow night, since I have all the ingredients on hand. 3. Randy's Slow Cooker Ravioli Lasagna (from All Recipes). Another easy dish to make and throw into the crockpot. I just need frozen ravioli. 4. Crockpot Million-Dollar Pasta. I just need to get the macaroni. 5. Super Easy Seared Ahi Tuna (from All Recipes.) Since Aldi's have it on sale, perhaps cheaper than Giant Eagle, I'm going to give it a go and have it on a Friday night. 5. Crockpot Ham-and-Cheese Quiche. All I need is the ham and the pie crust. 6. Spaghetti Cacio e Pepe (from All Recipes.) An easy dish to make. I have all the ingredients on hand and will make it probably next week. 7. Pasta Promodoro (from All Recipes). All I need is the plum tomatoes. 8. Pasta ai Quattro Formaggi (from Yummly). This recipe looked interesting to make. I just need to get two other cheese like Asiago and Gouda to complete the meal. I know it's a lot of pasta going around next month. But I'm hoping it would help me gain some weight. I can't try to try these recipes out and pick new ones out for April, including using up my last Cornish hen, too. What's going on your dinner plate this month?

I still don’t understand the point of doing pasta dishes in a crock pot when you can do them just as easily and more quickly on the stovetop. Spaghetti Aglio e olio (with garlic and oil) legit takes like 10 minutes to cook. In any case, all of your meals sound great. I wish I could eat that much pasta in a month! I’m making homemade pasta a few times this month as it is the dish of the month on Chowhound.

@NJ Chicca..I made spaghetti and Italian sausage in the crockpot once, and it was the best dish I ever made I think. The slow cooking makes all the flavors meld together awesomely!

NJ, I only have one crockpot pasta dish listed for March, and that's the million dollar pasta. The rest are just in the regular pot and cooks for 30 minutes or less. My recipe was about 20 for the post. If it's not a crockpot dish, it won't have crockpot in front of the name. OOO. I would love to make homemade pasta someday and maybe bread.

Yeah they do. I've just subscribed to the All Recipes magazine (after I had some issues with payment in January for 5 dollars for a limited time deal) and hope to find some new recipes to do this spring and summer.

These all sound pretty good. I need to cook something in the crockpot soon. I haven't used it since I made chicken and rice soup about a month and a half ago. Maybe I will try something from your list. Where are you getting your recipes?

I get my recipes from a variety of sources: Pinterest, All Recipes, Yummly, Recipes that Crock. New York Times's Cooking section too. I also get them from Genius Kitchen as well. Yeah it does sound so good. Go for it!

Same here. I tend to do my main crockpot meal on Sundays (like when I'm at church) and do leftovers for Wednesdays like after yoga.
