A delicious Spanish tortilla for lunch.

The protein was in the eggs (3 between us two), chorizo Español, a medium sized potato and a medium sized onion. Leticia was shocked when I said I would use just one potato. But she will have to get used to it. I told her that I needed her to be healthy so that she could take care of my own ailments When the tortilla was done, with lots of sautéed veggies on the side, she accepted lunch was not so meager and that it was delicious. I will now take a nap and then I will see what can I make as a snack. The idea behind diabetes diet is that we should eat small amounts every few hours. See you after my nap

Even though I found out today that I did not have diabetes, I will diet for Leticia and I might shed some pounds on the way.

She took care of me while I was in chemo. Now it is my turn. There are things that you cannot pay by just handing out a salary.

Tortilla - I guess I think of the Mexican tortilla - the flour or corn flour kind. This sounds delicious! One potato can actually go a long way.

@marguicha Sautéed veggies are good and healthy. I also avoid too much olive oil to keep them lighter.

@LadyDuck I find that if I sauté them in a wok I use less oil. Leticia does not like woks though.

Yes, this sounds very delicious! I am diabetic and have to eat proteins(not sweets) in six small meals each day.

@nela13 Yes. Tortillas are thicker than omelets so you have to turn them. My mother used a plate, I use the top of a bigger pot.

I've completely cheated when making this dish in the past. Instead of thinly slicing a potato, I used... ...potato chips/crisps. In my defense, I got the idea from an article that interviewed a well known chef. It worked really well, especially since they were good quality chips that were seasoned with onion and rosemary

I have never used chips. But then, potato chips are not something I usually have at home. Instead, I use potatoes very often.

@marguicha I was a food demonstrator at a grocery store for many years, and I did that recipe as a way to sell our chips to people who might otherwise not think to buy any.

The dish looks great! The jambalaya looks delicious too. I like one dish cooking. I like spanish rice and I use Knorr or Rice A Roni easy dish adding onions, bell pepper and taco seasoned hamburger. I will either have the taco flavored hamburger or refined beans with melted cheese. Good luck in finding a cure for diabetes. Take care! One of my favorite dish is corn beef hash that I make with canned corn beef tomorrow if I have time to cook it.

@marguicha I eat aloe fresh from my garden it's the smaller variety by peeling the thorns and after I clean it with vinegar spray, I just munch away. I take a tablespoon of virgin olive oil and coconut oil every other day. I stay away from too much sugar too. I hate being pre-diabetic. I'm doing everything I can to not take meds. I'm afraid of meds seeing the commercials about what things like Invokana did to people. Take care!

Oh after my own heart and I make them like that too, Looks so very yummy but I don´t eat them all the time for the potato really more than the egg itself. Leticia is right. No te digo mas que eso.
