What's going on the dinner table tonight? Share with us!
I'm trying a new recipe from Katie Lee's Endless Summer cookbook: Vegetable Manicotti. Normally when I make manicotti I make crepes, but this calls for using the pasta tubes so I'm going with that. Fine with me as it is easier that way. The filling has sauteed onion, garlic, zucchini, and yellow squash. I have some leftover baby spinach from last night so I may add that too. My husband will be wondering where the meat is. There are some leftover Turkey Ricotta meatballs from last Thursday so he can heat those up and have them on the side with his dinner.
That is what's happening here. What are YOU having? I want to know!

That actually sounds very yummy. Unfortunately I am on the road and so there will be no cooking for me tonight. I'm not sure what I am having yet. Thinking maybe Hardees since it is right up the street from the hotel where I am staying tonight on business travel.
