What's for dinner? July 19

What's going on the dinner table tonight? I want to know! I'm making hoisin ginger pork chops which is a recipe from my Endless Summer cookbook. To go with them I'm doing corn fritters from the Smitten Kitchen blog and sauteed baby spinach. It is just me by myself tonight but I still deserve a good meal. That's what is happening here. What are YOU having? Do tell!

I have no idea. The power keeps going out.

I was never bothered by the power going out until Hurricane Sandy. We were lucky and only lost it for 24 hours but people just 1 block up the street lost it for 2 weeks. My sister one town over didn't have it for 2 weeks. Our very good friends 30 minutes away had no power for a month and a half. No power and no heat in November and December. It was awful. You would go outside and hear generators everywhere. Now I get nervous every time the power goes out.

@thislittlepennyearns You couldn't get one right after the storm. It was insane. My dad paid $2000 for one. My husband brought one home from work the day before it hit so we were okay. Others had no power for the entire time. It was awful. We don't have a generator now, but if we needed one we could borrow my dad's. Gotta get his money's worth out of that sucker.

Your dinner sounds good. I have not made myself a real dinner in a long time. I will have to start because it is getting tiring just opening a can of something or having a sandwich. Enjoy your dinner.

I thought I was going to be the only one home so didn't plan anything. My daughter was working but I didn't know until when. My husband left to go to the driving range and said he wouldn't be home until 6:30, no time for dinner as he had to work at 7. Next thing I know my daughter's boyfriend is here, my husband my daughter, then my other daughter. Full house and no food. LOL! Younger daughter put a frozen pizza in the oven which we shared. Older daughter and her boyfriend went out to eat (or pick something up). Hubby said he was stopping at the drive-thru (which probably means McDonald's). Not the healthiest of families.

I try to eat healthily, but the corn fritters aren't the best to make. Oh well. . . at least they are homemade from scratch.

It was my birthday dinner, so I went all out. Steak, potatoes, and green beans. No dessert, though I did try. It ended up being a slushy this morning, which was very good.
