WHich kind of Potatoes are they then ?

Yesterday, I was shopping around and in the grocery store, there it was the small poster telling me, these kind of potatoes you can bake in the oven, this kind of potatoes, you can roast. SO there was many kind of potatoes on the little poster, telling me what I should do with my potatoes. For me a potato is a potato. Yes I could prepare for a recipe with potatoes, so I could take a potato that could go specially in the oven. Another kind for steaming only. It becomes fancier than it should be. But you know if someone can do those things, than the best.

There are many varieties of potato. Some have a waxy consistency and some are more floury (when cooked, that is). The floury ones tend to be best for mashing and baking, while the waxy ones tend to be best for using in stews and casseroles and for salads because they keep their form better. Yes, in the old days, a potato was a potato (unless you grew them and then you'd probably know them as 'first earlies', 'earlies', 'main crop' and 'lates' and would have much to say about the different varieties!)

There are many varieties of potatoes. You can see a big price difference in them as well.

Those look like regular Russets or Idaho maybe.
