What´s for dinner today?

I am getting quite hungry, after all.
I discovered several very interesting leftovers in the fridge. I think that I will start with a snack of baked eggplant and onions in olive oil. I like to add a bit of allspice to the halved onions. That dish is called 'escalibada'.
After that, I´ll toast some multigrain bread to soak on the olive oil.
And if I´m still hungry, I´ll check again for real food. What are you having for dinner today?

I cut and halved the eggplant and add salt, pepperand olive oil. Top it with a slice of cheese.

We make a dish of Eggplants (Brinjal ) here by cooking in a cooker or open Pan and we call it as "Bharta" by adding peas.
But I also like the shape of the Eggplant you have shown here !
