Frugalish meal: Mung Bean & Coconut Curry

I found this recipe online based on these split mung beans I had already had...Someone gave me these on my free community site (Buy Nothing) and I wanted to make a recipe around them. Unfortunately, I didn't have like any of the spices I needed - cumin seeds, garlic, coriander, ginger - so I did have to go buy those. BUT, now I will have them next time they come up in a recipe. This is a super simple recipe with not a lot of ingredients. Mung Bean and Coconut Curry 4 tbs canola oil or olive oil 1 tbs whole cumin seeds 2.49 9 cloves garlic/3 tbs crushed garlic 2.99 14 oz can crushed tomatoes 1.29 2 tbs freshly grated ginger 3.99 2 tbs ground coriander 4.19 1 tsp tuermeric 1 tsp sea salt 1 tsp cayenne pepper 4 cups water 1 cup mung beans (well rinsed, picked over for stones) 2.99 14oz can coconut milk 2.19 1 med lime .65 1/2 cup cilantro .99 Optional - french bread on side .99 6 servings In large pot, cook cumin seeds in oil for about 1 min, add garlic and sautee 3-4 mins, and then add spices and crushed tomatoes. Add water and mung beans. Increase heat to high and bring mixture to a boil, then reduce to low, cover, and simmer, stirring once or twice. If mung beans are tender, stir in coconut milk, increase the heat to med-high, turn off heat, and then add lime juice. My cost with already having a few ingredients on hand (including mung beans): 19.78 for 6 servings Cost for most with just some basic spices: 22.77 total I have NOT been cooking much at all lately, and this is not a very good frugal meal - but it might have been if I had some more of the ingredients on hand - my biggest goal was to make something with these dried split mung beans that have been sitting in my pantry for a long time. It tasted pretty good, was really filling, and was pretty easy to make, too.

I use beans, peas, lentils cooked with coconut milk quite a bit. They are healthy stuff.
