Annalist Chronicler, my Head Chronologist and Chief Executive Vice President In Charge Of Timely Affairs, tells me that St. Patrick's Day is Thursday. She's probably right. Not just because she's usually correct when it comes to these matters but also because she just returned from an Irish Coffee Symposium in Cashel and she assures me that many people in Ireland also think that St. Patrick's Day is Thursday and they should know. Many of the girls on my Staff also went to Cashel, including Brie, my favorite Upstairs Pastry Chef and she's the real reason for us gathering here today. While there, she stumbled on a recipe for brownies made with Guinness® Stout. She was up all night baking them and they do look good. I haven't worked up the nerve to try them. They do seem appropriate for St. Patrick's Day. But. I don't like Guinness® and I don't like Espresso, which they also contain. But Brie says they're Magically Delicious and I would like them anyway. So maybe I will. In the meantime, I know that many of you, my 2,264.1192 Billion Loyal Dedicated Daily Readers do somehow manage to enjoy the disagreeable taste of Guinness® Stout and coffee. For this recipe, the Guinness is reduced to a syrup to intensify the flavors and really make the chocolate stand out. The brownies are a nice marriage of fudgy and cakey and are intensely chocolatey, thanks to the bittersweet chocolate and cocoa powder.
