I made a salted caramel cheese cake for dessert.

My daughter & her family were coming for dinner this afternoon & as she has been abroad for a few weeks asked for a roast dinner. Personally l would have preferred a salad but my wife insisted on cooking roast lamb etc. I made the cheese cake which was delicious & so easy. I packet of digestive biscuits. 4 oz of melted butter 2 pots of double cream 2 pots of Mascapone 1Tin of Caramel Sea salt I first made the base using a plastic food bag l crunched up the packet of biscuits. When they were finely mashed l added the four ounces of melted butter & pressed it into a serving dish to make the base. I then whisked the double cream until it thickened, added the Mascapone & the tin of caramel caramel & added some sea salt flakes. Continued to whisk it all together then spooned it into the serving dish & put it in the fridge to set. Everyone liked it & l told my daughter to take the rest of it home so they could have dessert tomorrow too.

@garymarsh6 Oh shut up and stop making me salivate. I’ve just had a week’s holiday in Sligo and your dessert sounds like it could knock the restaurant desserts I had there out of the park. Home made is always to be preferred.

It was a first time & delicious. Next time l will half the ingredients as there was a lot of it but l really prefer citrusy flavours really but the kids woofed it down!

You made a very large cheese cake considering the quantities you are listing. My husband does not like the biscuits base for the cheesecake, I always bake a sponge cake to make the base.

@garymarsh6 I am glad he does not like the biscuits base, because he should not have butter, at least the sponge cake has no butter and I use goat cheese to make our cheesecake.

Haha l don't think so. I like to watch Master chef here in the UK & it is incredible to see their passion & talent but although l am a good cook l do not consider myself excellent.

Ohhhh, my kids would totally go for that . . . daughter loves cheese cake, son loves salted caramel anything! Sounds like a fancy meal and dessert time with family - ah, but they are worth it .

It is condensed milk in cans that has been boiled. It takes three hours to do that at home but now you can buy it already caramalised.

That sounds delicious. Would you mind giving me the actual amounts of double cream and mascapone? And does the caramel come as a sauce? I don't think I'd have been sending any leftovers home with anyone!!

A pint of double cream which l whisked & it doubles in size & thickens. Half a kilo of Mascapone One tin of caramel. It is a tin of condensed milk. If you boil that for 3 hours it turns into beautiful caramel. But you can buy it already caramalised in the tin. Spread the crushed biscuits into a dish for the base with the melted butter holding it together. Pour on the creamed incredients & let it set in the fridge. No cooking needed at all.

Cheesecake is so good. I rarely make one or have any, because I swear one piece puts on 5 lbs, and it takes forever to chisel offf the 5 lbs! Salted Caramel sounds just delicious.

@garymarsh6 It's still popular here, not as much as it was but seems especially popular at coffee shops. I tried it and I just mostly like my coffee unflavored, and to taste like coffee only.
